Whole Berry Cranberry Sauce

An easy thick cranberry sauce using whole cranberries

Yield: 

5 cups

Ingredients: 

6 cups cranberries, rinsed and drained
1 cup sugar*
1 1/2 cups water

Instructions: 

1. In large sauce pan, combine water and sugar and stir. Add cranberries.

2. Cover and cook at medium heat, stirring occasionally, until mixture boils. Reduce heat (so that mixture is simmering and not boiling) and stir (uncovered) as berries pop and mixture thickens.

Additional Notes: 

*Use more sugar for a sweeter sauce. These measurements make a fairly tart cranberry sauce, which I like. Adjust to suit your tastes!

I had a bit of leftover homemade cranberry chutney so I threw it into the blender with some frozen banana and juice to make a smoothie. It turn out very thick and tasty and it's a good use of leftovers! I bet it would work with your cranberry sauce as well!

I love this. I do the same thing, but instead of the water I use 3/4 c orange juice and 1/4 . vanilla extract. You can change the measurements if you want less vanilla flavor, etc. I also add a dash of cinnomon sometimes.

I love cranberry sauce! It would not be a Christmas or Thanksgiving meal to me without the addition of this bright and colorful dish. It really doesn't take long to make - why buy canned when you can make something that tastes and looks so much better in such a short amount of time? As an added flavoring, I also add 2-3 cinnamon sticks.
