Southwest Dip

Southwest Dip

A creamy, cheesy dip made from salsa, cream cheese, and cheddar cheese

8 ounces cream cheese, softened
4 ounces (1 cup) shredded sharp cheddar cheese*
1 cup salsa (use hotter salsa for a spicier dip!)

*We prefer a sharp cheddar in this but you can use any kind.  Sometimes I do some sharp cheddar and some pepper jack, just depends on what we have on hand.

"[This is] one of our favorite dip recipes.  My husband likes it with tortilla chips or spread on a burger.  I like it with round crackers (like Ritz or Hi-Ho).  My daughter will eat it by the spoonful if I let her!

"It's so easy to make and I always have the ingredients on hand.  It is better if it has a chance to sit for at least a couple of hours for the flavors to blend but it's really good right after you make it too.  It's my stand-by if we are invited someplace last minute and I need somethig to take, or for a quick easy snack.  It goes great with sandwiches for a quick lunch (or sometimes it's just lunch by itself with some crackers!).

Tammy's Review:

This is a yummy nacho chip dip! This would go great in place of sour cream on taco salad, also. It's flavorful and cheesy, and probably the easiest cheese dip I've ever made! My rating: 10/10.

I make something similar only it is baked in the oven. I use 8 ounces of cream cheese, 8 ounces of shrededed Cheddar cheese and 10 ounces of Salsa or a 10 ounce can of Rotel tomatoes and green chiles. Bake until hot and the Cheddar is melted.

I made this dip yesterday for a party with a bunch of my friends from church, and it was a hit. I really enjoyed it..the leftovers are in our fridge, waiting to be eaten :o)

My favorite chip dip is a simple mix of cottage cheese and salsa, but this was perfect for something a little more impressive looking for guests. :-) A new twist on flavor, and very good!

Good, but the flavors never seemed to blend. I'm wondering about popping it in the oven for a few minutes. I appreciated the fact that it was so simple and speedy to put together!

Love how quick this recipe is to make and it has a great taste too. :)
