Simple Fried Rice
Buttery fried rice with bits of scrambled egg and onion
2-3 servings
2/3 c rice 1. Place rice and water in saucepan. Cover and cook at high heat until boiling. Stir once and reduce heat to lowest possible. Cook for 12 minutes. 2. In non-stick skillet, melt butter and add onions. Saute for a couple minutes, then add egg. Stir as egg cooks to make small bits. 3. Add rice to skillet. Add salt, pepper, and optional ingredients to taste. Stir and fry over medium heat for about 10 minutes. Do not overcook rice, or it will become clumpy and mushy when you try to fry it. Add salt and soy sauce to taste, to avoid over-salting.
