
Roasted rock cornish game hens, seasoned with garlic, rosemary, and thyme
2-4 servings
2 rock cornish game hens
2 tablespoons butter, melted
1/4 teaspoon rosemary
1/4 teaspoon thyme
1 small clove garlic, minced
1/4 teaspoon lemon pepper

1. Rinse hens under fresh running water. Lay breast-side up on a roasting rack (inside a roasting pan). Combine melted butter and seasonings, and brush over chickens.
2. Add boiling hot water to the bottom of the roasting pan (under the rack the chickens are on). Bake in a 350 degree oven for about 60 minutes or until chickens test done (180 degrees internal temperature). Baste during heating if desired.
