Rice Lasagna

Rice Lasagna

Browned ground beef mixed with spaghetti sauce and freshly cooked rice, layered with cottage cheese and topped with cheddar before baking

Yield: 

6-8 servings

Ingredients: 

1 1/2 cups (uncooked) rice
1 pound ground beef
1/2 onion, chopped
1 clove garlic, minced
1/2 teaspoon salt
1/8 teaspoon pepper
1 teaspoon sugar
3 cups spaghetti sauce
2 cups cottage cheese
8 ounces (2 cups) shredded cheddar or mozzarella cheese*

Instructions: 

1. Cook rice according to package instructions.

2. Brown ground beef with onion and garlic in a large skillet. Drain excess grease. Add salt, pepper, sugar, spaghetti sauce, and cooked rice. Stir well to combine.

3. In a medium-large casserole dish (can use a 9x13-inch dish or a casserole dish of equivalent size), put a layer of the rice mixture. Top with a layer of cottage cheese. Continue layering until dish is full. Top with shredded cheese.

4. Bake at 350 degrees for about an hour (baking time depends on depth of dish used), until hot and bubbly.

*Emily notes, "I have used both mozzarella and cheddar, but you could use anything. I must say though, that I prefer cheddar. It gives an extra zing!"

I loved making this! It was very easy to make, and I just really liked the taste! I will definitely make this again! We warmed the leftovers in a pan on the stovetop with a little water, and it tasted just as good as it did fresh from the oven! Great recipe! Thanks, Emily!

It was very easy and pretty good. There was so much of it that we are still eating it 2 days later. I used mozzarella and I add green peppers when browning the meat. I usually us ricotta cheese instead of cottage cheese, but my ricotta was already spoiled (never been opened and wasn't expired!) so I just layered with the mozzarella and it still turned out pretty good.

I really like to make easy things that will last a long time. We have leftover night every Wednesday since we have to sort of rush out the door to go to church right after dinner, so if I make this on a Monday or Tuesday, its perfect.

I havent made it in a while, but Im making it tonight, and I look forward to it.

okay, i am one of those that loves lasagna but forgets to buy lasagne noodles. THIS recipe was perfect for us! and it was soooo easy!!!
my husband and i loved this, don't ask me why but our kids were afraid of it. they ate it, but just kept asking why is there rice in here? where's the noodles. whatever... it was gone in two days.
i put the cheddar cheese on top of mine and baked it all bubbly and good. it was the PERFECT Recipe for leftover spaghetti sauce!

We really enjoyed this dish, even though to us it didn't really seem much like lasagna. It was relatively easy to make and in my opinion hard to flop! And we loved it as leftovers too! I will definitely be putting this one in my recipe book!
