Here's another delicious mexican-style casserole recipe from guest chef Judee!

Judee created this yummy Enchilada Casserole recipe to feed her family of 8 (including 4 teen boys) in an affordable and easy way!

Using taco meat, rice, refried beans, and cheese, Judee fills flour tortillas and lays them in a casserole. She tops them with her special sauce creation (see the recipe for details!) and bakes the casserole before topping with sour cream and serving.

Just one of these big enchiladas is plenty to fill a person, and the dish is fun to make! I have made it many times and there are several family members who love to come over to our house especially to have Enchilada Casserole! While this isn't a traditional enchilada recipe, it is a yummy casserole and great for serving to large groups or extra-hungry mouths. :)

I have eaten Judee's enchiladas on several occasions (she's Joshua's mom, for those who don't know!), and got the recipe from her first-hand. It's one of my favorite mexican-style casseroles!

~Made these tonight~

I made these for dinner tonight and they were delicious. I made homemade salsa, refried beans, and jalapeno poppers as side dishes.

Our family loves Mexican food and this casserole will definitely be a keeper recipe that we use again and again.

I'm going to chop up some leftover turkey that was sent home with us and try it with that. I'll let you know how it turns out!
