This week's recipe of the week is a delicious, quick and easy casserole that tastes almost like Thanksgiving dinner itself! Chicken and Stuffing Casserole is a make-ahead dish that combines chunks of chicken, a "gravy" of cream of chicken soup, and some stuffing, into a savory main course. If you don't want a lot of last-minute preparation, this is definitely a good choice for a traditional-tasting dinner without all the extra dishes and fuss!

One thing I really like about this recipe is that is tastes great when made with leftover chicken! I've used leftover turkey in this, too, with great results. When we have turkey, I cut the leftover meat into bite-sized pieces and freeze it in small portions for uses in meals like Chicken and Stuffing Casserole!

Freezing homemade stuffing mix

Shorty, you asked about freezing the homemade stuffing mix ~ I imagine you could freeze the stuffing mix, but I'm not sure if it might get soggy or something. BUT, yes, you can definietly freeze your day-old or stale homemade bread. Then you can thaw it and toast it and make the stuffing mix part.

The stuffing mix will keep for a bit in the pantry though, because the bread should be completely dried out. Bread cubes that are completely dried (which is how they get when you bake them in the oven like that) won't mold like fresh bread will. So it's quite possible you could save up your stale bread in the freezer and then make a double batch or two of the stuffing mix, and use it as needed until you ran out. :)
