Browned chicken breast, baked with a balsamic vinegar and thyme sauce with onion slices

2-3 servings

3 tablespoons butter
2-3 large boneless skinless chicken breasts
garlic powder, salt, and pepper
1/2 cup chicken broth
1/2 onion, sliced
1 teaspoon thyme
4 tablespoons balsamic vinegar
1 teaspoon sugar
1/2 teaspoon salt
1/2 teaspoon pepper

1. Melt butter in skillet. Add chicken and brown each side well, sprinkling each side with garlic powder, salt, and pepper.

2. Grease a small baking dish and lay browned chicken breasts inside. Pour broth into skillet; add onions and thyme. Simmer for 10 minutes.

3. Lift vegetables from skillet with a slotted spoon and arrange on chicken in baking dish. In a small bowl, combine vinegar, sugar, salt, and pepper. Pour into skillet and simmer 5 minutes. Pour over chicken.

4. Cover and bake at 350 degrees for 45 minutes or until chicken tests done inside.

This is an easy "fancy" chicken dish, with the sliced onions and the balsamic vinegar and thyme. The flavor is delicious! We like to eat it with fried or seasoned rice and a cooked vegetable and/or salad on the side. My rating: 9/10

Hubby liked it!!
I made the Balsamic Thyme Chicken tonight for dinner, and my husband liked it a lot! I didn't tell him what the recipe was called, until afterward, and he was surprised to find out that it included balsamic vinegar--his favourite! I guess the sugar took away the tartness, yet it wasn't too sweet. Thanks, Tammy, for helping me to get out of the dinner-time menu rut :-)

An instant favorite!
