Breaded chicken breasts with pasta, marinara sauce and mozzarella cheese

3-4 servings

1 cup dry bread crumbs (needs to be a pretty fine consistency)
1/2 cup grated Parmesan cheese
1/2 tsp dried thyme
2 tsp paprika
1/2 tsp salt
1 tsp pepper
3/4 cup melted butter
2 1/2 lbs boneless skinless chicken cut into 1" cubes or strips
12 ounces whole grain pasta, cooked according to package instructions
Marinara sauce and mozzarella cheese, for serving

1. Preheat oven to 400. Combine the dry ingredients in a shallow bowl. Dip the chicken in the melted butter, then roll in crumbs.

2. Place in a greased 15 by 10" sheet pan. Bake at 400 degrees 15-20 minutes. Serve with pasta topped with marinara sauce and mozzarella cheese.

Really, really super good!!!!

This recipe is really easy to make and turned out GREAT!!!

The instructions worked just perfectly, and soon we had delicious, perfctly-seasoned Chicken Parmesan sitting on our plates! We both agreed that this recipe deserves a "10" and that we WILL be having it again!!

The one thing I did differently, was leave the chicken breast whole instead of cutting into strips like the recipe says. I actually just forgot to cut it, but it still was delicious! 

I made my own breadcrumbs for this.

First, I toasted 3 slices of whole-grain bread, I tore the toast into small pieces and put them on a cookie sheet. I preheated the oven to 350 degrees and put the sheet of toast in to bake.

As soon as I put the toast in, I turned down the oven to 300 degrees. I baked the crumbs for about 25 minutes, until they were dry but NOT burned, of course!! ;)

I took out the sheet, let them cool, and crumbled them with a potato masher. It made very fine crumbs and worked just great. :)

This recipe is so easy and tasty! I think it's a lot better then Chicken Parmesan from a resturant. I have made it multipe different times, and each time it comes out well and gets lots of compliments.
