Buttery fried rice with bits of scrambled egg and onion

2-3 servings

2/3 c rice
1 c water
2 T butter
2 T minced onion
1 egg, beaten
salt
pepper
soy sauce, optional
parsley flakes, optional (for color only)

1. Place rice and water in saucepan. Cover and cook at high heat until boiling. Stir once and reduce heat to lowest possible. Cook for 12 minutes.

2. In non-stick skillet, melt butter and add onions. Saute for a couple minutes, then add egg. Stir as egg cooks to make small bits.

3. Add rice to skillet. Add salt, pepper, and optional ingredients to taste. Stir and fry over medium heat for about 10 minutes.

Do not overcook rice, or it will become clumpy and mushy when you try to fry it. Add salt and soy sauce to taste, to avoid over-salting.

A nice side dish (5/10)
Don't interpret the score as being bad--it only reflects the simplicity of the recipe and the need to use it as a side dish. Eaten alone it is just a nice rice dish--good, but still rice. This recipe is not overly complicated though and I enjoy it a lot. It is makes a nice side dish, especially when eating grilled salmon (fillets or steaks) or chicken. When used in conjunction with the right foods this side dish really excells. If you are looking for a recipe with a bit more flavor and can be eaten as a side dish or a stand alone meal look up Tammy's Chicken Friend Rice recipe. Now THAT is a killer rice dish!
