My favourite eating apples are Cox's Orange Pippins, but I don't know if you get those in the US. They are a pale green streaked with red, and they taste like a slightly sweeter version of a Granny Smith (which is my second favourite).
For baking or cooking, I usually use Bramleys, which are the classic English cooking apple.
I've not heard of Cox's or Bramleys... but that doesn't necessarily mean we don't have them in the US ;) I was reading that there are over 1,000 varieties of apples! I could have listed many more choices in the poll, but had to limit it :D
Well..I used to just LOVE braeburn and fuji. Somehow, a few years ago around harvest time (this time of year in Wisconsin!), I went apple picking and tried a Gala apple. I was HOOKED!

Yes, I definitely still like to eat red delicious for a snack (I'll have to send Tammy my carmel-peanut butter dip recipe...), but cooking with them is AWFUL! One of the very first desserts I made for my hubby (over 3 years ago when we started dating, and I was trying to prove how good of a cook I am...pride goeth before a fall! ;) ), I made the worst apple crisp ever...it was mushy, flavorless, and looked like, well, baby food. And the poor guy ate it anyway...and told me he loved it. ;)
Well, I'm sure we have all had our share of disasters in the kitchen ;) Like the time I served my guests tostadas on shells that were so tough the children could hardly eat them! lol I just did that 2 weeks ago! :D
Yes, do send your caramel peanut butter dip recipe-- it'd probably be really popular now that summer is nearly over! It sounds like something Joshua and Yehoshua would love! :D
And I need to add to that last post, I LOVE baby food...applesauce/baby apples at least. This was totally inedible. The DOGS wouldn't even sniff it. As Bill Engval says.."There's your sign..." ;)

I like Ida Reds, Granny Smith, and Golden Delicious for baking. The combination of firm, tart, and mushy, sweet works well totgether for pie, crisps, etc.

For cooking, however, we love my parents Harlson apple tree apples. They have the right balance of tart with sweet and a great texture. (You need to pick them after a frost however to get the best flavor.) They also hold forever in a cool basement or fridge.

I have a hard time eating or buying apples that are or will be grainy or soft soon after being brought home. I love Braeburns best, but Fuji and Gala are close behind. My children love Galas, especially the smaller fruits, they are kid friendly in size.

A good apple in the Northeast is an Empire which is recommended for eating or baking although Rome and Cortland are better baking apples. An Empire is a cross between Red Delicious and something else. Picking apples at the orchards now and they are very good. Holly

We are a farming family and my husband's uncle and cousins are apple farmers. My favorite for fresh eating are far and away HONEY CRISP. But a ROME apple off a tree says fall to me. :)

I like Gala for eating AND cooking ~ but I find I have to add about a teaspoon of lemon juice for a bit of tartness when making baked apple dishes. I like how they get softer than granny smith apples do. MMMMmmm!
My husband likes Braeburn apples ~ a bit too "raw potatoey" for me.
My kids like MacIntosh ~ like fragrant applesauce in a skin!
I grew up surrounded by 30 acres of apple trees...Rome Beauty, MacIntosh, Winesap and Jonathon top my list. I don't like the newer varieties...25 years ago we had never heard of Fuji, Gala, or Granny Smith!
We just tried Honey Crisp apples last week for the first time, and while they were delicious I don't think we can justify/afford the price for more than a special treat. :) We love apples!! :)

Honeycrisp!! It took a long time for our University (Minnesota) to develop this apple. So long, it seems to me that they even lost the records of the exact parentage. Anyway, we planted one some years ago & this year was the first year it fruited in any substantial way. We have three other trees: a Haralson, Haralred, & a Prairie Spy. The Spys are an excellent keeping apple. If I do things right, I can have some of this variety all the way into February with no blemishes. We love apples around here! :o)
I like the color and sweet, tart flavor of Rome. Honey Crisps are really good. I had them once at a farmers market in Idaho and now that we are on the coast I have not sean them. Granny's I like for salad and baking.
