
Crispy homemade hashbrowns
4 large potatoes, scrubbed (or peeled)
1 small onion, finely chopped
1/2 teaspoon seasoned salt
1/4 teaspoon pepper
oil, for frying
1. Shred potatoes and mix well with onion, salt, and pepper.
2. Put about 1/8-inch of oil in the bottom of a frying pan or skillet. Heat over medium heat until hot (350 degrees). Drop two spoonfulls of potatoes into oil, flattening into patties.
3. Fry for 10-12 minutes; flip and continue frying for another 5-10 minutes, until nicely-browned and fully cooked. Drain on paper towels, and fry the remaining potatoes in two more patties. (If oil gets low, you may need to add a little.) Add additional salt if needed; serve with ketchup if desired.
We love making homemade hashbrowns! These are easy to make, but SO tasty! Be sure to fry them long enough on the first side: they should be showing signs on the top that they are becoming cooked before you flip them the first time. These are a great breakfast side dish or treat for dinner with foods like hamburgers or hot dogs. :) My rating: 9/10
