Olivia is experienced in the kitchen, and loves making mexican dishes for her family! This is a quick and easy summer salad recipe, Fajita Salad -- a nice change of pace from everyday lettuce salad or something heavier like tacos or burritos.

Olivia tells one of the reasons she likes this recipe: "We loved this salad. It was very flavorful, filling, and a cool alternative on a warm Summer night!"

Olivia is currently working as a librarian, but still manages to make time to cook and help her mother at home. She is a wonderful example of a Godly daughter honoring her parents and seeking to live her life for God's glory! Olivia keeps a blog which I always find thought-provoking and inspirational! I've known Olivia for over four years and she has been a constant source of encouragement and godly wisdom to me.
