
A toasted Italian garlic bread, topped with meatballs, sauce, and pepperjack cheese
1 loaf Italian bread, sliced horizontally (like for one large sandwich)*
1 1/2 cups spaghetti or pizza sauce
16 fully-cooked meatballs
2 cups (8 ounces) shredded pepperjack cheese
1 cup (4 ounces) shredded mozzarella cheese
4 Tablespoons butter, softened
1 small clove garlic, minced
1/4 teaspoon salt
parmesan cheese, optional
1. Mix garlic, salt, and butter; spread over the two bread halves. Lay bread, crust side down, on a cookie sheet and broil for a couple minutes until top is toasted.
2. Heat sauce and meatballs in saucepan on stove. Reduce heat to low and add pepperjack cheese, stirring to melt.
3. Lay meatballs and sauce over bottom half of bread. Sprinkle mozzarella cheese on top. Broil (bottom half of bread only) for a few minutes, until top is toasted.
4. Sprinkle parmesan cheese, if using. Put top of sandwich on (the other half of the bread) and cut into servings.

*Alternately, you can use hoagie rolls/smaller sub buns, and make individual sandwiches instead of the one large one, cut.
This is a great meal to make when you have leftover spaghetti sauce and/or meatballs. It looks neat, but is easy to make. The pepperjack cheese gives a nice "kick" to the sandwich. This is a good recipe, but I'm not really a sandwich-person, myself (Joshua loves it though!). My rating: 7/10
