Canning TomatoesI spent the morning doing my tomatoes. Yehoshua helped me by washing them all! I cored and cut out any bad spots, and then poured boiling water over and peeled them. Then I diced them into large chunks and open-kettled them. Joshua took a little video of me as I was canning.

My mom canned some last week, and this was my first this year. Since there weren't many, I just canned diced tomatoes. When we have a lot ready, we'll do other things. :) What method(s) for canning do you use? I agree... this is a busy time of year. I remember last year, we were busy canning and such until November! Our last thing was dehydrating green peppers from the garden (because we had so many!) before the freeze. :) I finished up canning just days before Benjamin was born! I had wanted to do applesauce, but I ran out of time and after baby I didn't want to do any more. ~Tanya Why in the world not?! ;) I took life easy after having Eliyahu. I'm just not one of those "bounce back quick" people, despite having great labors and uncomplicated births. Glad you enjoyed the video! :) I could never have gotten it posted without Joshua's computer knowledge :) The canning method in the video is called "open-kettle". You can only do certain foods this way. When you fill the jars and then boil them (for, say, 30 minutes) it's called "boiling water bath" canning. Maybe I'll post more about that when we do some foods that way! :) Katie and I just watched you, too. It's nice to put your voice together with the rest of you. ;) More! More! Neat video--it motivates me to try canning. I always thought it was a lot more involved than that. So that is all you have to do to "seal" the jars? You can read more about open-kettle canning on this page. This method of canning used to be "allowed" for high-acid foods. Now, it isn't recommended by experts for any foods, and tomatoes aren't considered high-acid. The link I gave gives instructions for adding acidity to your tomatoes, and one additional step, boiling the jars in a hot water bath. Post new comment |

Our tomato are just starting to ripen. Soon I'll be busy making salsa and canning them as well. Now until middle of sept is a busy with canning peaches, pears and tomatoe etc... :) ~Tanya
