Hot creamy chowder with corn, celery, onion, and potato chunks

4-6 Servings

1 can of corn (about 2 cups)
2 large baking potatoes, diced
2 stalks of celery, cut into bite-sized pieces
1 large onion, chopped
2 T flour
2 T butter
4 cups of milk
1 t chicken bouillon (or substitute 1 c chicken broth for 1 c of the milk)
Salt, pepper, and paprika to taste

1. In stock pot, saute onions and celery in butter. Add flour and stir.

2. Add all other ingredients and bring to a boil, stirring frequently.

3. Lower heat and cook until potatoes are tender and soup has thickened, about 1 hour.

Corn chowder may be frozen, and tastes excellent when thawed and re-heated.

This is an excellent soup, and one of my favorites to make and serve. I love the creamy texture, along with the flavor of the corn and onions, especially. Getting the right amount of salt is crucial to the success of this soup. I recommend tasting it as you season. I am not a person who likes to taste-test foods as I prepare them... I like to just throw things in and be done. :) But having enough salt (and not too much salt!) is the last step in making this a soup people will go wild about. :) My rating: 10/10

Delicious!
What a wonderful soup! Very easy to make, inexpensive and tastes absolutely wonderful! I used 2 cups frozen corn and about 2 tsp powdered chicken broth. The fam loved it!

A nice change
This was a very tasty soup! I didn't have kernel corn on hand so I used 2 cans of creamed corn... which made the soup taste very much like creamed corn. I think kernel corn would have been much better and I'll try that again. It was a very rich soup (in my opinion) so I wouldn't make it often, but it was different from the norm around here and a very nice change. (I also second Joshua that garlic bread goes good - never tried the grilled cheese, but I could see how that might go too)

LOL! This one was mine once... ;) See, I love to taste test this, so I don't mind because it's SOOO yummy. Now I wish I had bought some corn to go with my snowy potato soup...

An excellent corn based chowder (10/10)
I was slightly skeptical when Tammy had first suggested this recipe. I mean, who has ever heard of corn chowder? Clam chowder, yes, but corn chowder? I am pleased to report that this recipe has an exquisite texture and a rich, mellow flavor that is sure to please--especially on a cold winter's day. This recipe works well as a main main dish, but I prefer it as a side dish. I personally have found that it accents grilled cheese sandwiches or garlic bread very well. This is one of my favorite soups.
