She notes that, "Any mix of lettuce/spinach/greens will work, whatever you like or have on hand. I often use the regular dried Parmesan as it is always on hand. You can add other chopped cheeses too if you want. I used homemade goat cheese the last time and it was delicious!"

Wonderful!
I love making this salad and dressing. It's SO close to the "real stuff" and not to mention a great deal cheaper too. =D

10/10 -- absolutely wonderful salad!!!
Joshua and I made this salad and we LOVED it. Joshua isn't normally much of a salad person, but he said it was really good! I loved the dressing recipe. It's really good -- if you like Italian or creamy Italian, you'll love it! It was fun (and easy) to make, too. I didn't have a blender, so I just used a whisk on that. The dressing recipe makes about 1 and 1/4 cups of dressing, so we had some leftover dressing for next time. This dressing recipe is my newest favorite homemade salad dressing! Yum!
