Dark Chocolate Cheesecake, Chicken Sandwiches, and guests

Joshua made a Dark Chocolate Cheesecake yesterday, as a special treat for while his grandma is here. I got to sample a piece today (of course) ;). It is so delicious. I love chocolate, but am not a huge cheesecake fan. Joshua makes the BEST cheesecakes though!!

Yehoshua helps crumble the crackers for the crust

Joshua used chocolate graham crackers this time, for the crust. YUM!! Yehoshua wanted to help crumble the crackers for the crust, and I caught him completely lying on the table trying to reach them with the rolling pin! I keep my camera in the kitchen these days, so I was able to take a quick picture. :)

We're planning a trip to Ohio's Amish country (most likely) on Friday, with Joshua's grandma. Tomorrow will be "get busy and get the house ready!!" day, as of course I have been up late working on the site and not cleaning. :) I've been writing at some articles to post eventually. Fun! :)

And on that note, I am off to bed!

I made chicken salad sandwiches a couple nights ago! It was the hottest day of our recent heat wave, so I was really relieved to remember that I had some poached chicken and didn't have to cook. :) I used the food processer to get the chicken, mayo, mustard, garlic and spices really smooth and blended (like a spreadable meat) then folded in the extras: onion, shredded carrot and peas. Served with fresh lettuce, sprouts and tomato. yummm....

Your recipe sounds yummy, too; I'd never thought of using salad dressing! Which dressing do you use? I bet a dill dressing would be good-- or a honey dijon.

Actually, by "salad dressing", I meant "Mircale Whip" or an off-brand equivalent. :) Your chicken salad recipe sounds good--a lot different than mine! You should email me the recipe to try sometime :D

We don't have a food processer, so my chicken salad was pretty "chunky". I could have cut the chicken smaller, though. :)
