Guest Chef Abigail Paul shares summertime squash casserole recipe!Abigail Paul is accustomed to cooking for a large group -- she lives on a farm with her parents and five younger siblings, and often cooks for guests, as well! Her family owns and operates an 160-acre organic farm in Iowa, along with keeping a large garden and many other projects. This Summer Squash Casserole is just one of the ways they enjoy their fresh garden produce! Abigail writes about why she submitted this recipe: "I've sure enjoyed making this the last couple summers -- we all really like it and there are never any leftovers. I like this dish because it's so easy and quick -- and with 8 people to feed, that's a pretty important factor around here. ;-)" If you have over-ripe zucchini or squash, Abigail recommends this recipe as a great-tasting way to eat it! She says, "Zucchini also works well with this recipe; I often use a combination of it and yellow summer squash. Even those that go too long before being picked are tasty and tender in this dish. This recipe can be adjusted to your family taste - add more onions or other spices, chopped meat, cheese on top, etc. We like it just as is. :-)" Abigail has quite a reputation. Although the recipe she has submitted this time seems fairly normal and harmless, she has also been known to cook up some unusual experiments... and claims they're tasty! She actually specializes in dishes like "vinegar pie" and "peanut butter cayenne soup". :D

This was absolutely DELICIOUS, Abigail! My whole family enjoyed it immensely and you were right..... there weren't ANY leftovers at all.
I will most likely be making this several times this summer....
