
At my bridal shower (9 years ago), I was given a variety of kitchen utensils. It was fun to try the various items! I discovered that although my mom never used a whisk, whisks were very useful! And we ended up with some unique things... some of which we still have and use, and others that were donated. ;)
One of the gifts was a fine cheese grater. It produces beautiful thin strands of cheese or carrots. I also use it to zest lemon, since it is the finest grater I have. I zest the lemon (or orange or lime) and then use a knife and cutting board to finish chopping the zest into tiny pieces. This works well, and gives a better, more uniform flavor than just using long(er) strands of zest in a recipe.

When we were making Glazed Pumpkin Spice Bread, I was zesting an orange for the recipe and decided to take a video of how I use the cheese grater for citrus zest. (In the video, you can see how big the holes are on the grater.)

no, I don't have a link up for the pecan waffles we were talking about during last week. Basically, you just use your regular waffle recipe and add roasted chopped pecans to it. Enough so that they are a part of every bite.
I am linking up a recipe for home made chocolate pudding that we like to serve hot for COLD winter nights. The tip part is about how when you multiply the recipe, you must then also multiply the amount of time that you stir it while it's boiling accordingly. Otherwise it doesn't thicken up right.
If you ever make meat balls out of sausage, try adding some lemon zest to them. We use to do that at the caterers when making stuffed mushroom caps. Not only makes them prettier, but adds to the flavor as well!

candied orange peel
When using an orange, I first make a series of cuts about 1/2" apart down the entire orange, peel and scrap off any white on the inside. I then bring 1 cup water to a boil, add 1 cup sugar and the orange peels. I boil them for at least 5 minutes and carefully remove them from the bath. I save the orange simple syrup for other uses. I sprinkle additional sugar on top of the peels and allow them to dry thoroughly. After they are completely dry, I put them in a jar and save them for a variety of uses. I chop a spoonful and add it to the zucchini bread dough, for example...or into blueberry muffins.
Two meals from one cooking session
The recipe that I included this tip in, backfired on me and did not work out but normally, with a little additional food, I easily stretch one meal into two by the use of the freezer.
