Sour Cream Apple Pie, poison ivy, etc...

Today was busy. Lots of laundry. Lots of cleaning. Lots of giggles with Eliyahu. Lots of talking with Joshua. (Yay!) And Yehoshua went to Grandma's for a major protion of the day. What a nice relaxing break.

You'd think I'd have all my great post ideas written up, but alas, I'm still trying to find the time to write about all the things I want to. (So keep checking back for my coming posts about diabetic-friendly recipes, cooking with little ones in the house, cooking ahead, food budget tips, etc...).

Tomorrow is Yehoshua's surgery, at 10:30 am. Thanks for praying, and I will update about it tomorrow, YHWH-willing.

Wednesday or Thursday, Joshua's grandma will be arriving (by car) from Washington. We're so excited!!

It has been really hot here. So I decided to wait to mow the lawn. :) I did finally make it outside to pull the poison ivy out of the flower beds. "Leaves of three, let it be" is a nice saying and all, but I think I let this stuff go a little too long. It was huge and had so many roots and vines, I doubt I got it all. I didn't want Yehoshua to get into it accidentally, though, as it was bushing out along the side of the garage! Yikes! And then, where to put it?! I didn't want to just leave it in the flower beds, or put it in the yard... so I put it on our brush heap in the backyard. I wore plastic bags on my hands to hopefully keep from getting poison ivy on my hands and arms.

And now I must get to bed... 5:30 am comes too early. :)

Hmmm... on the sour cream

Hmmm... on the sour cream apple pie recipe, I'd say there's not enough butter for the topping. Crumbles usually have equal parts flour, sugar and butter, so try making the butter 1/3 cup. Also, try brown sugar. That should crisp it up without needing to add quick oats.

Thanks for the tips!

Joshua loves brown sugar (we use the "real" sutff :D) so I will be sure to try that next time! The topping does get crispy, but it doesn't crumble very well. I'll increase the butter next time, and then alter the recipe if it's better that way :D
