Coconut in our stir-fry, and our relaxing day at home

Okay, so, omelets were out, and I had already thawed a small bag of sliced leftover steak. (We routinely thaw leftovers to use in other meals.) I remembered how Joshua always tells me to look through some of our cookbooks when I need ideas for what to make. "We have cookbooks for a reason!"

So, I plopped down on the couch with Yehoshua and we started reading cookbooks. I found lots of recipes to try in the future. And... I found what I needed for tonight: an idea. I came across a stir-fry recipe that called for coconut. I decided that I would make pepper steak... with coconut! So... I took my Spicy Sweet Pepper Steak and added 2 tablespoons of unsweetened coconut to the sauce.

I didn't mention this to Joshua, because for some reason I figured he would tell me that coconut in a stir fry was a little crazy. ;) However, he happened to come into the kitchen as I was making it, and saw the sauce... with flakes of coconut floating on top of my whisked mixture, not yet added. "What is that?!"

"Honey, this is a new recipe I'm trying."

"But what is that white stuff floating on top?"

"Oh, it's just some... coconut. I only put in 2 tablespoons. It just looks like a lot because it's floating." (I tried to look busy as I fried the veggies.)

"Is this a real recipe?" (I get asked this a lot.) ;)

"Well, it is now." ;)

"Did you make it up yourself?"

"Ummm... kind of. See, I got the idea from one of our cookbooks. You know how you're always telling me to look through the cookbooks for ideas."

"Which cookbook did you look through?"

"The stir fry one!"

"Well, I say to look through the cookbooks for recipes, not ideas. And the stir fry cookbook doesn't have very good recipes in it, if you remember right. I can't believe you're putting coconut in our pepper steak!"

"It's not very much, though..."

"I see a bunch in that bowl."

"You see a bunch because it's ALL on top! Look..." (I whisk it together to try to show how little there really is...) :D

"Well, it's too late now... just make it." :)

So, I did. It was... different. Different but good! Joshua didn't care much for it. I liked it! He says I have weird taste and that probably most people wouldn't like it as well as I did. ;) And so my pepper steak recipe is on the site, now... without coconut. ;)

Yehoshua drinks tea and reads my magazine 

We enjoyed a relaxing day at home today. This photo was taken this morning. I was sitting and drinking some tea, and had to get up for a moment. When I came back, Yehoshua had taken my place. :)

I got to sleep in (until 7:20!) this morning. That was a nice change, though I do enjoy walking early. Tomorrow we're walking at 7:30, so I'll get to sleep in a little then, too! :)

It's nice to be on a schedule, but a day off every now and then is nice, too. :) That's how I feel about Friday evenings -- it's the one evening when I don't need to be working on this site or finishing things up before bed... I can just go to bed and rest! :)

Joshua and I did go out this evening for a short walk, with Yehoshua in the stroller and Eliyahu in the Mei Tai. It was too hot to walk very far (for me). I am spoiled by going in the mornings!

This evening after the children were both off to bed, Joshua and I made apple pies. Joshua had already made the crust awhile back (it had been frozen), so we got busy and worked together on the pies. We made two different kinds, and I can't wait to share the recipes! :)

Tomorrow my cousin from Texas will be here, and I also need to get caught up on laundry and everything else that so quickly piles up. :) And on that note, I'm off to bed! :)

...and Joshua and I have those conversations often... whenever I start experimenting in the kitchen ;) I think it drives him crazy that I rarely measure things, and can't seem to follow a recipe exactly, ever! I have been measuring more, since we're posting recipes for other people to use. And I'm trying to be a good girl and make a recipe exactly how it says, at least the first time I make it. :)

Haha! :) It drives my sister crazy when I never measure ingredients - she got my mom to place a ban on it. :( And she always asks 'Are you using a recipe?' when she comes in the kitchen... :) I think that's why I don't like people being around when I'm cooking 'cause they always ask questions...."What are you making?" and I'm just like "It's a secret!"
