
A seasoned stove-top yellow crooked-neck squash recipe
4 small-medium yellow squash
2 Tablespoons butter
1/4 teaspoon oregano
1/8 teaspoon basil
1/4 teaspoon salt
1/8 teaspoon pepper
1/4 cup water
1. Wash squash and slice into 1/2-inch slices. Put water into saucepan and add squash.
2. Put butter on top of squash and sprinkle seasonings on, as well. Cover with tight-fitting lid.
3. Heat on medium or medium-high heat until boiling. Reduce heat and simmer for about 5 minutes. (Don't overcook! Squash should NOT be mushy! :D)
4. Uncover, stir, and serve.
This is one of our favorite ways to eat yellow crooked neck squash. It is so easy to make (practically as easy as opening a can of green beans, but so much better!!) and has a wonderful taste. Be sure you don't over-cook the squash, though. We like ours best when it's still intact but tender. My rating: 9/10.
I like this recipe so well that when we have fresh squash from the garden, I make this 5-6 times per week. Many people who don't care for squash, decide that they like it after trying this recipe! You can also use zucchini in place of the squash, if you wish.
