Weekly menu plan (June 6-12, 2010)

The Smoky Salmon Chowder was a big hit! It had been a number of months since we had this chowder, and I added extra chunks of (leftover) salmon fillet to make it meatier, since it was really the "main dish" at that meal.

When I made out my menu for the week, I forgot that (A) we were having company on Friday (even though it was on my calendar!!) and (B) our company didn't like fish. So, I pulled some cooked ground beef/onions/spinach from the freezer and made a crustless quiche. It wasn't the fanciest of meals (especially in appearance!) due to my lack of planning, but it sufficed. I am NOT superwoman, after all! ;)

I also made these pumpkin dinner rolls, which I allowed to rise too high, so they fell a little in the oven and looked rather odd! :P Most of them still tasted okay, thankfully. :)

I made the dough for the pumpkin dinner rolls in my bread machine. Although I had to "babysit" it by scraping the sides, it easily handled the huge amount of dough. :)

On the menu for this week:

Sunday -- Leftovers (all meals)

Monday -- Easy grilled salmon with lemon, rice, broccoli, Matza Ball Soup

Tuesday -- Salmon chowder, fried rice, green beans

Wednesday -- Grilled mahi mahi sandwiches on homemade buttermilk wheat buns

Thursday -- Grilled Sea Bass (new recipe), green beans, watermelon

Friday -- Homemade pizza (or else some grilled chicken breast -- diet-friendly ;D), fresh fruit (bananas, apples, and grapefruit), green beans

Saturday -- Depends on whether we have guests or not, but most likely some grilled fish and rice with asparagus! :)


The chowder and Quiche both sounds good.I For sure will try the chowder when we have a cooler day.Do the pumpkin rolls freeze well?Rick doesn't eat bread or rolls so it is just the boys and I that would eat them.

Yes, the pumpkin rolls freeze well; like a normal dinner roll would! :)

Tuesday Night(Got the e-mail this morning)We are going out to eat with Rick's Parents at Ponderosa.A treat from Papa & Grandma Paradis after Ryan's soccer game.

Who does the grilling at your house? And do you always use brown rice? :)

Rick does the grilling here.Yes we always have brown rice.From what I have read brown rice is better for you than white rice.So we switched last winter.I like the texture of the brown rice better than white now.It doesn't seem as soggy and holds together better.

Are you able to buy canned pumpkin right now in your area? I'm in Kansas, and due to the "pumpkin shortage" this year I haven't been able to find it since November! I'm having withdrawals-I love baking with pumpkin!

I actually haven't looked recently; the can I used last week was a gift to us after Moshe was born. I still have one large can left that we got at Costco last year (in a 3-pack)...

Pumpkin is one of my favorite veggies/fruits to bake with! :)

I live in Mississippi and never noticed about the canned pumpkin until this week. I want to make pumpkin bread for a friend who is having surgery. However, I cant find it anywhere. I was not aware there was a shortage, but apparently this dates back to Thanksgiving. Good ti know I might not be the only one who can't find it! :(

Funny you mention this. I live in Orange Park, Florida (near Jacksonville) and I also am not able to find canned pumpkin. This is just crazy!!! I was going to make pumpkin bread for my step-son's birthday per his request. I guess I will have to give him and IOU!!

Wow!! I would never survive at your house! (I greatly dislike fish) Are those ones you have to worry about with mercury levels at all?

I've researched the mercury levels back when we got fish before... thankfully Salmon, which is my very favorite, is one of the lowest for mercury levels! Mahi mahi is slightly higher, and the bass and halibut (which we don't have right now) are a lot higher -- so I will spread those out more. :)
Do you still dislike fish even when it's not "fishy" tasting and is moist and tender? :) We had company a couple weeks ago and I overheard the guy telling someone else "Yeah, I ate 2 pieces of Joshua's [grilled] fish, and I don't even like fish!" :)
I don't like fishy-tasting fish at all! We make sure to keep ours cold, thaw and use immediately, and the way Joshua makes it on the grill, it's so good!! :)

The smell is what really turns me off from fish. Does salmon or mahi mahi have a fishy smell?

Salmon does have a distinct flavor (Mahi Mahi is milder) but neither should taste "fishy" -- IF they have been kept properly refrigerated/frozen! Joshua and I love fish but we do not like "fishy"-tasting fish! :)

Grilling the fish (with a good recipe... like Joshua's that uses some lemon and liquid smoke flavor, salt, and oil or butter) also takes it from "good" to "excellent" in my opinion! :)

Your food always sounds so delicious. We love fish here but only have it about once a week, if that. It is still kind of pricey here, even though we live in FL, surrounded by water! Go figure! Mostly we do meatless meals.

I am so proud of my 7 year old son; he almost made tonight's dinner by himself! Except for lighting the stove burners and draining the pasta, he made spaghetti with my canned sauce, he even added extra mushrooms and put some fruit salad into a bowl for a side! I was very impressed with him.

It reminded me of your little helpers!

I have tried so hard to like it! I have eaten it and had some that was okay....fishy tasting....well, that is awful, but i had some that was like not miserable to eat, but i think it might be a texture issue for me. My mom always made me eat one bite, hoping my tastes would change and she hated fishy tasting fish. That is great it is low in the mercury. It is so good for you and I wish i liked it!

I'm trying your pumpkin rolls tonight. I hope they turn out and look as good as your did!
