We've been enjoying seeing the sunshine again this past week. Somehow the day is much more inviting when it's sunny enough not to need all our lights on inside all day! :)

I hadn't made this Saucy Broccoli Chicken Bake for quite a while (over a year I think), so it was a nice change of pace! :) I got a 3-pound bag of fresh broccoli florets from Costco last week and they are delicious! Broccoli, cheese, rice, and chicken makes a great combo. :)

And I'm glad my whole family loves broccoli, whether smothered in a yummy casserole or just steamed and topped with shredded cheddar! :)
