My first-ever baked cheesecake, back when we were newlyweds and Joshua told me "I love cheesecake, but your mom's cheesecake isn't real cheesecake."
So I made this lemon cheesecake. Super easy, probably fail-safe, and full of lemon! :)
We then experimented and made about 25 different kinds of cheesecakes and forgot about this little ol' lemon one that's made in a pie plate... until I made it again recently.
Better than we even remembered! :) Of course, if I could go back in time, I wouldn't call it lemon "meringue" cheesecake, since it has nothing to do with meringue. But I still say -- if you have this cheesecake topped with some real whipped cream, you don't need lemon meringue pie any more! ;)

Tammy, I made this for Thanksgiving dessert because I suddenly got a hankering for lemon cheesecake. Lemon meringue pie is one of my favorite desserts ever, but I never make it because it's so much work, plus my hubby doesn't like it! Anyway, I remembered you had a lot of cheesecake recipes on here, and this one fit the bill perfectly. Hubby was less than enthused because he normally is not a fan of lemon (or cheesecake), but he gave in and tried a piece . . . and he actually really, really liked it. I will definitely be making this one again and again--sooo delish!! :)

Thanks for sharing, Carrie -- that was fun to read! :D My mom makes wonderful lemon meringue pie but it IS a lot of work (crust, then the finicky [lump-free] filling part, and then meringue!) and even though we LOVE it, it is SO sweet. This lemon cheesecake isn't quite so sweet and is much easier. :) I'm glad you guys enjoyed it! :)
Lemon m. pie tip
I am a big fan of lemon m. pie. My favorite!! One way to make it extra lemony and not so sweet. Cut the sugar in half, increase the cornstarch a bit and double the lemon juice!!! I will have to write down the exact measurements, but it is really good!!! But you are talking to someone who survived on lemon filling almost as a sole diet for my entire first pregnancy....well, that and cornflakes with sugar. I was 19 and married and away from my mom....what can I say! i am amazed my son is healthy at all. Although he does have awful teeth!
I should go up and eat some of my lemon pie left from my birthday!!! Excuse me while I go enjoy it with some tea!
