I've been enjoying using my oven regularly since the weather turned cooler a couple months ago. Being in a higher-level apartment (3rd floor for us!) with no air conditioning meant that I avoided using the oven for much of the warmer months. :)
Now, when I wake up and the house feels cool, I just plan a baked meal! :D
This Easy Tuna Noodle Casserole was one such meal. I didn't have any meat thawed, so I used items from my fridge and pantry to create this creamy, cheesy hot baked casserole. Very delicious! :)
A lot of tuna noodle casserole recipes I have seen called for canned condensed cream soup of some sort, but I made a white sauce base for this casserole from scratch.
Even Joshua, who normally doesn't care much for tuna casseroles, said this one was pretty good! :)

This is pretty much exactly how my mom (and now I) make tuna casserole. Sometimes I throw in peas as well and usually I just use sharp cheddar. One of my favorite comfort foods, but my hubby is not such a fan so we don't have it often.
It is good!
I made this for dinner last night and it was a hit. My husband doesn't care for tuna and he had seconds! It is pretty fast and easy to make, too.

I made this recipe exactly last night and my husband and I both liked it very much. It is a nice change from the typical "cream of mushroom" tuna casseroles. I think this will be my new "go to" tuna casserole! I did have a thought to add a hint of paprika for a little zest so I may try that next time I make it.
