My new favorite pizza: Mediterranean Herb Chicken Pizza

One day last month, Joshua called from work to see how my day was going at home. While nothing was drastically wrong, I wasn't feeling well at all and was spending the afternoon lying on the couch while the kids played nearby.

I mentioned that I needed to pull some strength together to start pizza for dinner that evening. To my surprise, Joshua suggested that we just order pizza that night! We rarely eat out and I was feeling poorly enough that I didn't even give much thought to the expense and just said "That would be GREAT." :) (Later I realised that I was out of mozzarella cheese... so I would have had to find something else to make for dinner anyway!)

We ended up getting pizza from Papa Murphy's, a take-and-bake place. We tried their Herb Mediterranean Chicken deLITE pizza for a change... and we loved it!

And of course... our first thought was, "Hey! We could make this ourselves!" ;)

We've made our own Mediterranean Herb Chicken Pizza several times now, and it's so delicious! I love all the garlic, and the blend of tomatoes, chicken, spinach, and feta cheese... YUM!! :)

You and Joshua are so creative!
And I have a little secret to share.... I don't often get mozzarella cheese because of the price; we just put Monterrey Jack or Pepper Jack on our pizza because it's so much cheaper :)

I have been following your blog since you were pregnant with sweet little Ruth. (I LOVE the chubbyness!!) Hope to hear more updates and pics of this new little "bun" :)

Thanks, Samantha! :) I actually usually don't have any white cheese on hand besides mozzarella (or feta... but that doesn't count!) because mozzarella is cheapest at Costco. I have made pizza with pepperjack cheese though! :D

Hi Tammy,

I make something very similar and sometimes use pitas if I'm in a hurry and they turn out asolutely delicious! I put the pitas in the oven with a drizzle of olive oil and rub them down with a fresh garlic clove to crisp them up a bit before I top them and put them back in the oven. It's really good with fresh parmesan and a splash of balsamic vinegar. I love the whole spinach leaves on it. I've always sliced the spinach into thin strips but that looks really good and I'll definitely do it that way next time! This is one of our family favorites and it smells so good cooking!

We also love the chicken bacon artichoke delite pizza from Papa Murphy's, and I have started making that myself. It's great!

Another good brand

Is Nature's Promise. The only brand I've found w/o HFCS. And it's very flavorful!

I'm going to try this, this just looks soooooooo yummy!!!
