In-Season Recipe Swap: Fall/Winter Squash

This week's in-season recipe swap theme is Fall/Winter squash! (See this previous edition for summer squash recipes.)

I was excited to try Spaghetti Squash for the first time just last year! It's yummy and FUN and one of the first recipes I created with it was this Creamy Spaghetti Squash Casserole.

I just added another spaghetti squash recipe: Italian Baked Spaghetti Squash.

This recipe was given to me from my friend Marie S. in Ohio. She made it for dinner for us last Fall and then kindly sent me home with some garden-grown spaghetti squash and the recipe (at my request)! :)

Wow. I never knew you could eat the shells of squash. Aren't they bitter?

No, the shells aren't bitter at all. Eat them right along with the squash so long as they are cooked well enough. Think of it just like potato skins :)

I am trying this recipe tonight, as there are 4 spaghetti squashes begging to be used up, on my counter! Thanks!

Winter Squash and Apple Soup


I've made spaghetti squash once and it was very good. This looks wonderful! I'll have to make this soon.

Here is my winter squash recipe. I just made and blogged about it today.

I love using Butternut squash in oatmeal, oatmeal muffins, and grilled cheese sandwiches. The deceptively delicious cookbook has great recipes like those listed above to use veggies in that we actually love. I also recently cooked some little carnival squash. That was my favorite so far. Very sweet like sweet potatoes.


Here's one I shared in my blog a few days ago. It's got acorn squash in it, although it's not the featured ingredient, per se. Hope you like it!
