In-Season Recipe Swap: Pumpkin

This week's Recipe Swap theme is pumpkin! I love cooking with pumpkin. :) I have so many favorite pumpkin recipes, but I'll try to be somewhat brief and not mention too many different ones. ;)

Whole wheat pumpkin pancakes recipe

The boys and I recently made pumpkin pancakes! These Whole Wheat Pumpkin Pancakes were so tender and moist. We ate most of them hot off the griddle, without syrup. Such a comforting Autumn breakfast on a chilly morning! :)

The boys helped me mke the pancakes...

(Yehoshua [5] and Eliyahu [3])

Pancakes are easy to make and I had two very willing helpers! Yehoshua is quite capable in the kitchen, but Eliyahu on the other hand is just finally outgrowing the "Can't control my wild stirring!!!!!" stage. ;)

Pumpkin dinner rolls recipe

These Pumpkin Dinner Rolls are my staple Thanksgiving dinner bread/rolls. :) The pumpkin gives them a beautiful yellow color and when they're hot and fresh, spread with butter, I could forget the turkey and just eat these rolls. :)

Pumpkin sheet cake with cream cheese frosting recipe

Pumpkin Sheet Cake with Cream Cheese Frosting is simple, beautiful, and delicious! The sheet cake size (made on a jelly roll pan) makes it easy to serve to guests. :)

Pumpkin butterscotch muffins recipe

Pumpkin Butterscotch Muffins are really sweet, like cupcakes, and another favorite! Last week I was craving these muffins but didn't have butterscotch chips. I made them anyway, poured the batter into cake pans, and frostened with cream cheese frosting. Yum! :)

Pumpkin Cheesecake recipe

Pumpkin Cheesecake! Joshua made this and it's a delightful seasonal cheesecake! I love Joshua's awesome cheesecakes. :D

Roasted pumpkin seeds recipe

Roasted pumpkin seeds are good for you, and a great way to use something you might otherwise be tossing into the compost! :) These seeds never last long here... I love them!

Cream-filled pumpkin cupcakes recipe

And last (for now!) is Cream-Filled Pumpkin Cupcakes. I'm not sure how to describe these besides "YUMMY!!!" They're a fun treat. :)

I have more pumpkin stuff to share later this week, including my mom's pumpkin pie recipe! But now, I want to hear about your favorite pumpkin recipes!! :)

These all look so delicious! I love your son's face while stirring -- what joy.

Thanks for hosting -- I always get so many great recipes from your site.

All those recipes look sooooo yummy!! Hummmm...which one to try first! :)

After several weeks of not participating because of the busyness of my life, I actually have a recipe to share this week! :) Here is a link to my favorite fall dessert that gets rave reviews by people anytime I make it!

mmmm yummy pumpkins!

(you forgot to post your pumpkin roll!!! It's my fave!- i linked to it on my post!)

I didn't forget... I just tried to narrow down my very favorites!! :) I'm glad you like it so well! :)

I would like to see you make pumpkin tortillas. I think with the other goodies you have created you would do quite well with these and I think the would make good wraps too, maybe with a few roasted pumpkin seeds..... Now I am getting hungry.

Pumpkin is my very favourite thing to bake with!!! Here is a recipe for Pumpkin Cream Cheese Muffins. These last maybe 4 days in our house. I made a bunch in my mini muffin pan this time too, they were great for my little one who can't have a whole muffin!

Here's another pumpkin bread recipe, a little different than Finding Joy's, and also yummy. There are so many things you can do with pumpkin! Yum!

Tammy: I absolutely can not wait to try that pumpkin sheet cake!!!! You have made my very pregnant self very happy today:)

I can't wait to try some of these recipes! I was blessed with a huge pumpkin crop this year! I think we'll be eating pumpkin until next October! But we love it, so it won't be too much hardship!

Can I share more then one recipe? Here are a few favorites I've shared on the blog.

Now I'm off to look at the other recipes!

Hi Tammy,
I don't think there is ever such a thing as too many pumpkin recipes. ;) Thanks for all the ones you shared.

Sincerely, Lyn

Great round up of pumpkin recipes! Thanks! :-)

I want to try the pumpkin rolls some time this fall.I love rolls.

This is a simple way to add a little seasonal fun to a family favorite! Although, I think my little girl will eat anything with chocolate chips in it!

Your pumpkin dishes looked wonderful, especially the cupcake. Here's one more for your list:

If I'm not too late, I finally got my favorite moist, spicy, one-bowl p-kin muffins up:

Tammy: I want to try the pumpkin dinner rolls tonight but I don't have any wheat germ in the house. Can I leave it out without ruining the recipe?

Thanks for the help!

Kristin, yes, you can definitely make these rolls without the wheat germ. :) You could just leave it out or get creative and use something like cornmeal instead. :)

What a great recipe! The rolls were a hit. I actually halved the recipe since there are only three of us and I didn't think we needed 48 rolls! I'll be making these for thanksgiving dinner too.

Thanks so much for posting these, I am going to link to this post on my recipe blog, I hope that is ok.
I have printed off a bunch of your pumpkin recipes to try before Halloween.
Thank you!
