In-Season Recipe Swap: Lettuce

Welcome to our third In-Season Recipe Swap! :) Our past themes have been milk and asparagus, and today we're sharing recipes that use lettuce!

My new recipe for this week is this salad I created.

Southwest Chicken Salad

I created this salad as a healthy, homemade "Southwest" type of dish. It's light enough to be served as a dinner side, or for lunch. Joshua and I had a very difficult time deciding what to call this salad! The ingredient list isn't long, but it's varied.

Lettuce (of course). Colorful peppers. Green onions, avocados, black beans, chicken, and cilantro. The homemade dressing (recipe included) has garlic, as well. We finally decided that "Southwest Chicken Salad" was simple and, well, you'll just have to try it and let us know what it should really be called! :)

I wanted to have a new recipe to share for this swap, but we do have some old standbys, as well. :)

This vinegar and oil salad dressing recipe is the one my mom always makes for her garden-fresh lettuces. It's really super good on those tender new leaves!

Taco salad has long been one of our top summer meals that uses a lot of lettuce! :)

Oriental Chicken Salad recipe

Oriental Chicken Salad is a family favorite, passed to me from my friend Sheri in Ohio.

And this Olive Garden Salad and Dressing is spectacular! Yum!!

I am definitely making your Southwest salad for dinner tonight! I roasted a turkey this weekend for a dinner that never happened (long story), so I have lots of leftover turkey to use up. By chance I have all of the other ingredients on hand too. YAY!

p.s. you could always add extra meat to the salad, if you're making it for a main dish and have family members who need/prefer more meat in their meal! :)
