
Pudding. Such a comfort food, isn't it? :) While I really love my creamy vanilla pudding, sometimes life just demands a little chocolate. ;)
This dark chocolate pudding is so delicious! It's not going to qualify as a healthy food, unless using real ingredients counts. After all, it's a dessert! I love special treats sometimes. Yum! :)
This chocolate pudding is relatively simple and quick to make, and a perfect use for extra milk. I've also included instructions for making a chocolate pudding pie with this recipe. I hope to have a picture of that part soon! :)
Do you usually make pudding from scratch, or with a mix? What's your favorite flavor? So far I've really only experimented with vanilla and chocolate... :)

pudding - homemade or not?
My son has an egg allergy and all recipes for homemade pudding I have found contain eggs. And strangely enough, the package mixes do not. I really don't love the taste of the mixes, so we tend not to eat pudding much at all. I would love to find a recipe for pudding without eggs. I guess I could look at a vegan recipe...

No egg chocolate pudding
I found a recipe for Quick Chocolate Pudding in the "More with Less" cookbook by Doris Janzen Longacre (I highly recommend the book). It is simple and contains no eggs. Most of the recipes from this book are wonderful and use simple, everyday ingredients. (I did not want to print the recipe here because of copyright issues). Hope this helps!

Hi Jean. My son also has an egg allergy. Here is an eggless chocolate pudding recipe. It is just as good as one with eggs and much better than boxed.

Eggless chocolate pudding
Jean, I was going to say the same thing as someone below -- you can definitely make pudding without eggs! If you're using my recipe, you could leave out the eggs and increase the thickener (corn starch) slightly to compensate for the thickening that the eggs provide. :) Or, omit the eggs entirely for a thinner pudding (but I haven't tried that so no guarantees on exact texture!). :)
Chocolate pudding at its simplest is just cocoa powder, sweetener (sugar), thickener (flour or corn starch) and milk! :)

Homemade pudding is way to easy to bother buying packaged stuff. My favourite flavour is chocolate.

This pudding uses a food processor - and a banana, avocado, carob or cocoa powder, and honey. It's delicious, though I usually need to up the honey a touch.

I make homemade pudding and never add eggs because we also have people in our house who are allergic....you cant taste the difference and it is soo good!

Love the idea of homemade puddings
Tammy, Love the idea of homemade puddings. I have a trifle dish and a variety of trifle recipes. I love making trifles when we have company or take to a potluck or picnic. They are so visually yummy-there's never any leftovers! However, the recipes include pudding from a box. Making them with homemade puddings would definitely make them more wholesome.

Homemade Pudding
Pudding is one of our staple desserts, especially in the winter when it's cold. We never buy packaged pudding. We always make my husband's pudding recipe.
Now that we have a Jersey, we make it with our own milk. And we use our own free-range chicken eggs.
For flavorings we start with vanilla pudding and then add in a couple of chocolate chips per bowl for chocolate, or ovaltine works well too. Or we stir in frozen berries or fruit for a fruity pudding. Sometimes we will make chocolate pudding with hershey's cocoa but since we have some here that favor fruit over chocolate, we usually just do our own add ins for flavoring.
Tapioca is also a favorite but I'm having a hard time finding any bulk tapioca and just can't afford to buy those small boxes for our large crew.
JohnJean, I've never tried using flax-seed for an egg replacement in pudding, but it works well in baked goods. It might be worth a try in pudding.
Homemade pudding is an all-time favorite here!

About the tapioca pudding -- my mom makes tapioca pudding a lot and uses granulated tapioca, which is easy to get in bulk. (Well, for the matter, I think pearl tapioca is easy to get in bulk too, if you have a bulk food store... :P)
I actually pulled out my bag of granulated tapioca this morning and hope to get my mom's recipe from her and make some soon! I've never made it! It was always a special treat she made for my boys when we came over to her house. (It's one of Yehoshua's favorites!) :)

Yes! We've made homemade pudding pops before and they were yummy! We used a popsicle mold for ours.:)

I was just this morning trying to figure out how to use the rest of our heavy whipping cream before it goes bad (we have extra from then we made ice-cream).
I think I'm gonna try this pudding today, YUM!! Do you know how to make a chocolate-peanut butter pie from it, instead of just chocolate? My husband LOVES peanut butter with his chocolate!
My Attempts at Pudding
My children tried making pudding one time.. it called for egg whites. When we tried to eat it, it was totally disgusting. Why? My daughter said, "Oh! I thought we were supposed to use WHITE EGGS!!!" We live on a farm and get white, brown, and blue eggs... makes sense! Haha. We still laugh about it.

When I took home-ec. in highschool, one of the recipes we had to learn to make was pudding for pie filling. Before then, I didn't know you could make pudding from scratch. I thought it was strictly a box mix deal. My mom wasn't a homemaker. Anyway, I ended up with chocolate scrambled eggs. I haven't tried scratch pudding since.

Do you have to use whole milk? Never usually buy that.

You can use milk that is not whole milk if you wish. :) It won't be quite as creamy, but honestly -- with the additional cream the recipe calls for, it'll still be creamy enough! ;) Pudding is really versatile... the main thing is getting it the right thickness, in my experience! Oh, and I guess the right sweetness, too... that can be tricky and I've had flops! :P :)
Filling a Pie
Does this recipe fill one pie shell or two? It seems like a big recipe for one pie shell, but maybe if you have a deep pie pan...
I don't care for dark chocolate, but I will definitely be making this with milk chocolate chips next time I need an impressive dessert!
Recipe for 2 pies
This recipe (with the 8 cups of milk) would make two deeper pies. I am actually making the pie version today (only changing it to make just one pie) and planning to take pictures and put up even better instructions on the pie version (including a graham cracker crust and homemade whipped cream instructions!)... so it will be even easier for beginners. :)
Oh, and I'm sure milk chocolate chips would work as well! :) You may want to decrease the sugar a little if you do that though, since I think those are sweeter than semi-sweet chocolate chips...? :)
I made it!
I did make the chocolate pudding tonight! I had no idea it would make so much! It's still cooling, then I'm going to freeze at least half :-) I loved it warm, but my husband put his dish in the fridge to eat cold because he doesn't like warm pudding.

Pudding help
OK I have tried three times to make pudding now and I need help from you ladies. I feel like an idiot admitting this as you all make it sound so simple. :)
I can make it taste wonderful but my pudding never sets. It is a soup every time. I cook it until it boils and then let it boil two min.
I am pretty sure I am following the directions but something is not working for me. Anyone have any ideas as to what I might be doing wrong?
