
I've been sending granola bars in Joshua's lunches, and decided to try a new recipe for homemade granola bars. Unfortunately, after I started mixing up the ingredients, I realized that there was a lot of sugar in comparison to the other ingredients!
These bars are really delicious and nutty, but more like a candy bar than anything healthy. I guess it's a good thing they're loaded with cashews since I'm allergic to cashews and won't be able to devour them all! :)
Which reminds me, someone asked how I was doing with my weight loss. (I wrote about this in September and October.) Well, I still have 10 pounds to go. For the past couple months I've been maintaining my current weight (after losing 24 pounds last summer and fall!) but I really need to scale back a little and finish up. Too many slices of homemade bread slathered with butter. ;) Somehow being 10 pounds over my ideal weight isn't as depressing as being 35 pounds overweight, and I really need to tap back into the motivation I had last summer!! :)
Back on to the topic of my baking today... Considering how little I crossed off my list, I sure felt like I was running around all crazy!

I didn't get the granola bars out of the pan soon enough, and the edges became rock hard. And I do mean ROCK HARD. I hated wasting chunks of nuts (and all the butter and sugar holding them together!) but I didn't want to break my spatula or fork, so this pan got a good soaking.
Thankfully, Joshua loved the granola bars, pronouncing them "like a yummy nutty toffee!" and I didn't feel like such a failure.
Crystal says that a baking day is less of a frugal success if you have to order pizza for dinner. Well...

I ordered myself some pizza... and got busy making it. ;)
So in the end... here is what got crossed off my list today:
Make bread (3 loaves)
Bake bread (yes, I get detailed!)
Slice bread (I like to do lots of crossing off...)
Wash and fold 2 loads of laundry
Make granola bars
Put away clean dishes
Clean up kitchen
Do school work with Yehoshua
Read books to boys
Baths for all 3 children
Finish addressing our end-of-the-year family newsletters
Make dinner
It was sunny today. I like sunny days. Sunshine makes me want to take pictures. :)

I know it's off topic, but do you mind sharing what curriculum you are using with Yehoshua? I'm so eager to start formal schooling with my children (oldest is 2.5yo). I *love* reading about others' homeschooling.

I love granola bars, and use the following recipe.

I love it becuase I can use any combination of 3 dried fruits, and 4 nuts or seeds. I like to play around with it and add oatmeal for one of the grains as well. It also contains healthy sugar in the form of honey. It's a complete meal replacement.
The above link has a very low rating and I'm not sure why becuase it's fabulous. My kids consider them cookies.
Granola Bars
I made these granola bars too and thought they were good, but a bit sweet. You could probably cut back on the sugar. I did line the pan with foil. I think I even used some of that new foil from Reynolds that things do not stick to. I got a sample box one day at the store. It is expensive, but very useful for certain situations.

Making lists and crossing off
Your little comment about how you like to make lists and cross things off reminded me of the frog and toad story called "The List". Have you ever read it? It's adorable. Those of us who are list makers get a laugh out of it.
sticky chewy granola bars
Hey, those bars will get soft again if you put them back in the oven for a few minutes. That's what we had to do...they were rock hard...and it ended up being plain old granola not bars it was so crumbly, but yummy. I think you're right about the sugar.
