Easy cabbage casserole

Lunch tomorrow: Easy Cabbage Casserole. This picture is from a few weeks ago, I just never got around to blogging about it then. I have cabbage in the fridge from my mom, and some beef already cooked up from the freezer.

I've written before about using my Food Saver for cooked meats for the freezer. It really does save a lot of space and prevent freezer burn! I started putting cooked meats into the freezer for the first time when I was pregnant with my second child 3 years ago.

Since that time, I have continued the practice and I absolutely love being able to just pull out a package of already-cooked taco meat, meatballs, or meat for lasagna! It really does save dishes and time!

What does the meat in your freezer look like? Raw? Or cooked? Or a little of both?

We do have raw steaks/roasts in the freezer, and usually at least one whole roasting chicken, but my leftover chicken meat and any ground beef is cooked when I freeze it. :)

Dear Tammy,

Every so often, I am able to buy "coleslaw mix" on sale. Do you think that could be substituted in this recipe? (Coleslaw mix is just shredded cabbage and carrots)

I love your blog and have tried so many of your ideas. Haven't had a flop yet!

Hi Tammy,

About 3/4 of the meat in my freezer is cooked. All of the precooked meat is ground beef and chicken. I also LOVE the convenience of being able to take out pre cooked meat. It makes putting together a meal quick work.

Roasts, sausage and chops and such and just put in there whole. Sometimes I make a few meatloaves and cook them up to store in the freezer.

I have a combination of cooked and raw meats in my freezer. I generally have my beef split up into 1 lb. freezer bags (I buy 5 lbs. at a time) and i keep it raw. My chicken is taken from a whole chicken I cooked in the crockpot all day. It is great for chicken casseroles, salads, etc. I have thought about cooking all my ground beef before freezing it. Sounds like a great idea!

I try and always have cooked meat in the freezer, chicken pieces and hamburger. It's so very convenient, and speeds up the meal-making process tremendously! I love it!

Hi Tammy, I would have to say one of the best things I ever did for cooking convenience was to precook hamburger with onions, garlic and seasoning and precooked meatballs.:) I can't believe how much easier things are in the kitchen. I have an array of recipes that use these items and my life has been simplified SO much. I have moved on to chicken and pork cubes as well. Just as wonderful...in my opinion.:)
Right now, my freezer is contains mostly cooked meats and some already finished dishes or part of finished dishes like spaghetti sauce. I highly recommend the book "Make Ahead Meals" by Company's Coming written by Jean Pare. It's a bit difficult to get, since it's published in Canada, but well worth the effort. This is where I have gotten much of my ideas and recipes.

right now, i think i only have raw meat in my freezer. i usually try, however, to cook up large batches of hamburger or chicken to pull out and quickly make a meal. why use all that time and mess to make 1lb ten times when you can do 10lbs all at once?

How long does your ground beef stay good in the freezer? And do you label each one with when you cooked / packed it and what was in it? Thanks

No meat in my freezers, but plenty of faux meat...does that count? Typically the ground fake stuff that I use only needs to be heated up to eat, so in a sense, it's already cooked. I do have stockpiles of faux chicken (chikn)and I try to cut it up onto either cubes or strips for easy meals on weeknights after work.
Also, when I make my seitan (wheat meat) I try to make a lot and freeze the rest when I'm done cooking it.

My freezer is also full of chopped, cooked onions and peppers for easy additions to stir-frys, soup, chili, casseroles, and fajitas. I use small ziplock baggies to portion them out. That way, when my garden is producing a lot, I don't have to worry about it going bad. Just freeze and use when needed!

All of the meat in our freezer is raw. Ground beef is in slightly less than 1 lb bags, chicken breasts are individually frozen, and tenders are bagged in meal sized portions. We don't plan ahead well enough to know what sorts of seasonings to put in meat if we were precooking it (DH cooks lots of ethnic foods).

Most of our meat is raw. Though, sometimes I may just cook the whole lot to save time...it's rare for me though. I have been wanting to devote a day to cooking up meat to save time. I do cook extra casseroles a lot and freeze. This recipe looked soooooo good! I can not wait to try it.

most of it is raw, I generally pre cook more like when I cook a whole chicken, I put part of it in the freezer.

I am exhausted! The meal is in the oven. I hope it will be good!
It took me an hour to fix all of it and clean up the kitchen! ( and I do not have any kids in my way any longer!)
I must say I did every thing from scraps except the grated cheese ... and enough to feed at leat 8!
I used one pan to cook every thing one after the other;(I hate dishes!) I made white sauce and added a yougurt in it not having the ingredient...
I made the croutons ...

how on earth do you get round spending as much time in your kitchen?
I realise I am in the quick and easy way(but healthy!)
I am glad it is in the oven so that I can recuperate!!!
