May I ask how you processed your pumpkin?

I wanted to can some a couple years ago and could only find freezing instructions. Everything I read said that it wasn't safe for home canning? Due to the density, perhaps?

We didn't grow pumpkins this year but I'd love to know for future reference. Freezer space is always at a premium here.

Here is a recipe for the best pumpkin chocolate chip muffins in the world! A lot of people wouldn't necessarily discover this one because it is from a vegan cookbook, but I find the lack of dairy products makes the flavors really pop, and they are incredibly tender inside, with a delicious sugar crust on top. Make them exactly the way the recipe reads (except use chocolate chips instead of carob if you prefer, and you can leave out the nuts). Make sure you have the flax in there. When you first mix the liquids and dry, it will seem like you don't have enough liquid. Just fold it over a few more times and it will come together. These muffins are incredibly high in fiber!
