Peaches, the crisp way![]() I've been getting side-tracked here lately. As much as I enjoy writing about kitchen stuff, I usually have lots of "other" topics on my mind as well. Finding a good balance, managing my priorities properly, and going to bed on time is not my forte... :) My grandma gave us 2 pecks of peaches from their tree this week, and it's been fun having the fresh fruit to eat! I made a big dish of Fresh Peach Crisp yesterday, and it's already gone! Can I blame it on the children? They loved it!! We don't have fresh peaches very often, so we eat most of them fresh. What are some of your favorite ways to use peaches? I'm not sure if I'm ready to try a cobbler again, and I really need to stay away from all that butter and sugar anyway... :P Is a post about losing weight too off-topic? ;) Tammy I use your recipe for my crisps, but since we too are trying to cut back on calories I use 3/4 cup brown sugar and only a 1/2 butter, comes out delish. I use a 9x13 pan so that's a lot of dessert, can't wait for apples to be plentiful. thanks, Anna I do cobbler, eat them fresh, freeze some, and this year tried canning some. I also made peach jam and raspberry-peach jam (using frozen raspberries, as they're not available in our area fresh). We love peaches to top our oatmeal or waffles in the morning - - or afternoon or night:). The majority just get eaten plain or with a bit of sugar and milk. Your crisp looks yummy though! Hi Tammy, unfortunately I can't get my kids to eat peaches. Jakob does say he likes them but never wants them. Oh well more for me, peaches are my favorite. I'm not sure how you usually peel peaches but for me it is a lot easier to boil them for about 45 seconds then submerge them in ice water. (I guess it is called blanching) After that I just need to make a slice down one side and the skin peels right off. I can't wait to try out this recipe. It sounds delicious. We got our first dozen from one of our own trees this year, but that's it. Last year, we didn't get any because of frost-damage at the local orchard. This year, there was some problem with his early peaches, and he said he MIGHT have a limited quantity at the beginning of September. I hope there will be some when I go tomorrow! I love peaches and want to freeze some! I love peach crisp and cobbler. I also love making peach pancake syrup. It's my favorite variation of your strawberry sauce/syrup recipe. I also have a bread pudding recipe that uses peaches and has a nutmeg sauce; yum! Peach ice cream (actually ice milk made with whole milk instead of cream) made in our frozen yogurt/ice cream maker is also good. Heather (married in Aug '00, mom to 4 children under 7, with baby #5 due in early Jan '09!) I just love to eat them cut up and macerated in sugar, get them cold in the fridge. I'll serve this with an eggs/bacon breakfast usually. So good! And of course, there's home-churned peach ice cream. I've never tried it, but I've seen nourishing, non-desserty looking recipes using grilled peaches and chicken. Emily That looks good! Cobbler is "one of my favorite ways to use peaches." Also, making peach pie filling to freeze is a way we have used up peaches before. ...But we normally don't have extras - we eat them all up while they're still fresh. Could I ask for some help, too? What do you do with a rubber-maid tub full of fresh pears? A kind friend let us pick from her trees, but we really don't have any good recipes for pears, and even with eight people in the family, we're not going to be able to eat fresh pears fast enough to keep that whole box from going bad. I heard someone mention this morning making peach butter, which I think is similar to apple butter. After seeing how much sugar is in apple butter, though, I'm not sure I even want to look up peach butter! But MMMMMM. Tammy~ i tried a new peach recipe yesterday. i had a few fresh that were going bad faster than we could eat them. it's easy, but a little sweet. i sliced my peaches (i had 4 C, but would use closer to 6 or 8C) 1/2 C water, 1/3C sugar, 1T cinnamon, 1/4T ginger. i combined all those ingredients in a sauce pan and cooked till the sugar dissolved and peaches were warm. then i put them in a 9x13 cake pan. covered them with a dry yellow cake mix. sprinkled the top of the cake mix with another bit of cinnamon, grated 3/4 of a stick of butter. bake for 45 min at 375. but you don't use ready made cake mixes do you? it might work with just the dry ingredients from a vanilla cake recipe. We have had peaches and nectarines coming out our ears... being 7 month pregnant I've also been trying to avoid the butter and sugar in cobbler (but boy do I crave it!). Last night I tried a nectarine chutney recipe on top of rice and grilled chicken. It was delish! Nectarine Chutney I marinaded my chicken in olive oil, cheap white wine, garlic, salt and pepper before grilling. Easy and tasty! Tammy, Since you changed the search engine feature, I can't find the granola recipe that calls for six cups of old-fashioned oats and powdered milk etc. HELP! It is supposed to bake on two cookie sheets for about thirty minutes at 300 degrees or something.HELP!! I have already gotten the oats in the big bowl now I need the rest of the recipe! Someone asked about peeling peaches and I just wanted to add that when I make peach crisp or cobbler, I don't even bother to peel them. You hardly notice that the skin is in there. My husband actually prefers them with the skin on and it's easier for me! :) Just an idea if someone wants to save some time. This is something I am most definitely struggling with and would love to read something on it. We have special nutrition needs in our family as my husband has adult onset food allergies: all forms of fish and poultry, virtually all forms of dried legumes with the exception of peanuts in moderation and garbanzo beans, and walnuts. So you can see we eat a good deal of pasta, beef (to include pork on a limited basis), and rice (brown and white.) Due to health issues I can not go outside to exercise for 6 months out of the year. Asthma induced by cold temperatures (it is at its work below 0) and allegeries such as birch pollen. So I am always looking for something which I can try. Thanks, Peggy Peach Oatmeal Muffins (Makes 12 -16 muffins, depending on size of muffin tin) Preheat oven to 400 degrees F (200 degrees C). Grease muffin cups or line with paper muffin liners. In a large bowl, mix together oats, buttermilk, brown sugar, applesauce, honey, oil, vanilla, spices and eggs. In a separate bowl, stir together flour, baking soda, baking powder, and salt. Stir flour mixture into egg mixture, just until moistened. Fold in peaches. Spoon batter into prepared muffin cups. They are yummy and freezer worthy too! :) Sonshine I love peachs and have been wanting to try this myself but have not got around to it. Take 2 peaches halved and pitted. Raspberry Sauce: Place all the ingredients in a food processor and process until smooth. Strain into a small bowl. Sauce may be refrigerated for 1 day. Then put vanilla ice cream or frozen yogurt in a bowl with one peach half and top with raspberry sauce. Oooh I am thankful you posted this. My dad got a big box of peaches and so I'm going to be doing some cooking. :) And about weight loss, just a random thing - eating a tablespoon of cocunut oil in the morning and evening is supposed to get weight off very well! this just looks so good!! Yesterday I canned 7 quarts of peaches and 12 pints of peaches and 2 pints of pears. That would be my children and dh's favorite way to eat them (I also have a gallon zip bag of them in the freezer for pies at Christmas. My favorite way to eat them is in jam. On today's agenda is making peach pit jelly!
