Whole grain cracker recipes needed!

Does anyone want to help me answer some of my email before the box officially overflows? Great! Thank you so much! Let's start with this email from Kylie:

I just recently discovered your site, and I'm so excited! I just bought a grain mill, and I'm so excited to the many recipes you have here.

My question for you is: Do you know of any good homemade whole grain cracker recipes? I've been having a hard time finding some.

We have made crackers in the past, but they were only good, not excellent. If you have a good recipe for crackers, we'd love to hear it! Tell us in a comment, or leave a link to the post in your blog! Thanks so much!! :)

Healthy Grainless Crackers (gluten-free)

I've never tried these specific recipes, but have made plenty of other excellent recipes from both blogs.

crackers-finally

This recipe is from an old La Leche League cookbook,
before they redid it and made every recipe uber-healthy. i.e.-back when food tasted good.:)

2 cups whole wheat flour
(pastry flour will make crackers crisper)

1 tsp. salt (I'd use 1/2 tsp.)

1/2 tsp. baking soda

1/4 cup butter

1/2 cup buttermilk
(or regular milk soured with 2 tsp lemon juice)

1 large egg

coarse salt (for topping)

Combine flour, salt and soda. Cut in butter until mixture has texture like oatmeal. Add milk and egg; blend to make a stiff dough. You may need to add more flour, as whole wheat varies alot. Knead throughly.

Roll 1/8" thick on floured board, cut into squares and place on lightly greased cookie sheet. Prick with fork, sprinkle with salt. Bake at 400 degrees until lightly browned, about 10 minutes.

Fair warning, I have mever tried these crackers. If Kylie is grinding her own grain, I'm pretty sure it won't be pastry flour but do think I remember reading somewhere that if you sift 1tsp. cornstarch into 1 cup of flour, that will give you the equivallent of 1 cup of pastry flour. Does anyone else know for sure and does it work for whole wheat?

I don't comment a lot here (but LOVE to read and learn!!!!), but I just had to comment on this post.

I've been making crackers that are super yummy. I found the recipe at Nourishing Gourmet. Here's when I blogged about them. :)

But WATCH OUT!!! You can easily eat WAAAAAYYYYY too many of these little tasty treats!!

I grind my own grain and buy both hard wheat and soft wheat (pastry flour)
