
We've been eating from the garden... although unfortunately not from our garden (I'll tell you all about that later!). My mom has kept us supplied with fresh green beans, corn, a few tomatoes, and Vidalia onions. Someone else gave us some huge zucchini, as well!
With so many fresh vegetables, it would be silly not to eat them as the staple of our meals!

For this lunch, Joshua grilled chicken breast. The rest of the meal was veggies. Since the zucchini was so huge, I peeled it and removed the seeds. I prefer smaller zucchini, since I love the peeling and seeds, but free is free! :) When I make cooked squash or zucchini, I usually use this recipe. :)

And corn on the cob. Yum!! Yehoshua and Eliyahu each ate 4 ears of corn, 1/2 a chicken breast, some tomatoes, green beans, and a little serving of zucchini, too! I can't believe how much they eat sometimes!!

That's a perfect Summer meal. . . yum! Makes me miss my garden.
Although, being Southern, I do cook my squash with lots of onions and butter until the onions are caramelized sweet and the squash is squishy! :)

We bought a new grill recently(ours died of old age!) and this sounds like the perfect thing to try first.:)

Your plate of food inspires me to get my rear in gear and get those vegi's out of my refrigerator and onto our plates. I have a huge garden with my sister and our families do eat most of the produce. However, I get so lazy about cooking in the summer that sometimes I find it hard to get it cooked up. (If it then goes to waste I feel horrid!) Thanks for the inspiration to have more than the one or two vegis at dinner.
I have never left a comment before but I read your blog daily. I usually am nursing my 3 mo old daughter at the time so it is hard to type one-handed.:) I just find your posts so much fun as our families are fairly similar. I have a 4yr old and 2yr old as well as the baby but all are girls. Anyway, we do a fair amount of things simiarly - but you inspire me to do them better than I am currently.:) It has been such a blessing to have a bit of a break in the day and read your posts. squash,need help please
HI Tammy,I really enjoy your blog ,I would really appreciate your help or your readers .I have a lot of yellowsquash(with lots of bumps)the skin is so hard,its hard to peel I tried to cook it and the inside was good but the skin still to hard to eat.when i planted them they were suppose to be zucchini.I would really appreciate any help .I would like to freeze some to eat later.any ideas would sure help me.THANK YOU RENA

If the squash isn't over-ripe, then the skin should be tender... if it's an edible summer squash. Are the squash too mature? Do they look like yellow crooked-neck squash, or something else? Are they perhaps some kind of winter squash with a non-edible skin??

Well Tammy and friends let me start off by saying when the plants were planted i wasnt home so i am not surewhat was where,when i bought the plants they were suppose to be 1 spagetti plant and several zucchini yellow and green. now i do know what the zucchini look like but the problem is the other ones, some are pale yellow with bumps (no crookneck) and one does have the crook neck with tender skin .now i ended up with only 2 zucchini plants and about 6 mystery squash plants if their winter i dont want to pick them yet,but if their not i dont want to wait to let them get too old any advise would be appreciated for the mystery garden.THANK YOU RENA
