Faux Apple Crisp

Zucchini Crisp

Some relatives gave us several huge zucchini from their garden. I decided to try making a zucchini version of my apple crisp. I peeled the zucchini, removed the seeds, and sliced it thinly like apples.

I cooked the zucchini slices in a little water. Then I added lemon juice (6 tablespoons), sugar (1 cup), cinnamon (1 tablespoon), nutmeg (1/4 teaspoon), and some flour/water for thickener.

The result looked very much like apple pie filling, but it didn't really have the taste I was hoping. I sprinkled in a little citric acid, hoping for a more fruity, tangy flavor. It got slightly tart, but still tasted bland.

The sweet and crunchy crumb topping somewhat redeemed the zucchini pie filling.

Joshua asked if he should try a piece and I said "Only if you eat it with the mindset of 'This is zucchini!' and not 'This is supposed to taste like apple crisp!'" :)

Overall, I think it made a nice zucchini dessert... but it falls short of any apple dessert I've made. :)

My sister Bonnie made some zucchini pie (like apple pie) and when I asked her how it was, she said "Well, it did taste like apple pie... but it tasted like other people's apple pies... not ours." :)

But hey... free zucchini, right? :) And my big plate of dessert counts as 2 servings of veggies? :) Okay, maybe not... ;)

I think zukes go well with chocolate! Have U tried more recipes with choc?

I make some choc.-zucchini muffins that R really good and the kids always go for them---even knowing the zukes are in there!:-)

I've always wanted to do a zuke-choc. pie!hmmm?

Zucchini Pie

There's a recipe my mom and I make a lot where the zucchini and other pie filling ingredients are blended together to make a custard-type pie (with cinnamon sugar sprinkled on top, mmm!). It's often mistaken for pumpkin pie, and people are surprised when we tell them what it really is!

Does it sound like something you would like, Tammy? Should I send in the recipe for you? :) It certainly helps use up the abundance of zucchini we always have; we even freeze some zucchini specifically for this pie, to have it in the winter!

You are brave, Tammy!! :) Have you tried zucchini in a chocolate cake?? That is suppose to be delicious! This year I planted just one plant, so we have really enjoyed eating them sauteed with onions and seasonings.

i'm totally feeling challenged by this [in a good way!]-i'm going to make some with the zucchini in our fridge. do you think it needs a little salt?

Zucchini Soup

I live in Germany, and my German sister-in-law came up with a zucchini soup to get rid of large amounts of her zucchinis. It really turned out good (very German tasting and easy!) - but it's a bit of a "loose" recipe.

3 zucchinis, 1 onion, and 1 clove garlic chopped and cooked in 2 c. chicken broth
puree the cooked mixture
add 1 pkg. cream cheese to mixture and cook until cream cheese is dissolved.
salt and pepper to taste
cook separately 1 c. hamburger meat or chicken chopped
mix cooked meat with hot mixture and serve hot

An idea

Perhaps if you were to mix half zuchinni and half apples it would have tasted better. That way you use up zuchinni's, have the added health benifits of a veggie, but it will taste better with the apple.

Lol! This reminds me of the time I made my parents an anniversary meal, with zucchini "apple" pie as dessert. (Mom requested it; she wanted to see how it would taste.)

Everything was going well until I asked a younger sibling to stir the filling while it was on the stove, and I turned away to work on the crust. I suppose my sister thought I meant "give it stir, and then you can leave" - she was pretty young, after all! I only realized she was gone when I smelled burnt sugar and zucchini, and looked up.

Ahh...memories! Mom and Dad had their meal in a room other than the kitchen, so the burnt smell wouldn't be present. I actually was able to make a pie (I don't remember if I salvaged the filling, or made another batch), and Dad liked it. ...But I've not made the recipe since. :)

P.S. I liked the pie, too; it's not the TASTE that keeps me from making it again. :) ...Though I do agree that you must eat it with "zucchini" in mind, rather than "apple."

Apple (aka Zucchini) Crisp

I'm so sorry to hear that your 'apple' crisp didn't turn out. This isn't meant to brag, but mine is always delicious! I even make extra for the freezer so that we can enjoy it in the winter. My husband knows it is zucchini and he will eat it - yah! Sometimes he asks me to make it for a meeting he is having - after the men have ooohed and aaahed, he tells them they just ate zucchini! I'd be happy to share my recipe if you want to give it another try. (barbara at patriotsystems dot net). Chocolate-Zucchini cake is delicious too.

Good idea for the zucchini;

Good idea for the zucchini; we've made a lot of faux apple desserts with our zucchini. Thankfully, this year we have someone buying our extra garden produce so we aren't as swamped with zucchini and squash as we usually are.
Still.. I am trying to use at least one a day ;)
It seems to me that our zucchini don't have much flavor of their own compared to the yellow squash. Did I ever send you the recipe for the zucchini dessert squares? That's our favorite zucchini dessert around here. :)

Apple vs Zucchini

I have canned pie filling using an apple recipe. I did throw in several apples, using a ratio of about 1 part apple to 3 parts zucchini. . . maybe next time try throwing in an apple or two with the zucchini. Either that or maybe some applesauce, just something to give it more of an apple-y flavor.

Now, this makes a BIG 9X13, so you could halve this recipe for an 8X8 square (or even a round pie pan).
You really could serve this to someone & not tell them it's zucchini. Not that I would do that...LOL
