My husband is cookoo for coconut! I made this cake as a special treat for Father's Day dessert. Our whole family loved it! It is so moist and flavorful - the nutmeg and molasses really add that extra "something special". : ) I used "real" flaked coconut from the health food store instead of the baking coconut. So the coconut was a little dry in the frosting glaze, so I may need to try the baking coconut instead (any advice on that, Tammy?) Noone noticed that except for me though. : ) Thanks for another winner!
