
Joshua made these lemon poppy seed muffins [0] this past week, and they were so yummy!! In the past, our attempts at lemon poppy seed muffins weren't anything worth raving about, but I think we've now perfected the recipe!
Lots of lemon zest, no lemon juice, and a farm-fresh free-range egg for extra yellow color -- these muffins were the perfect soft, spongy muffin that Joshua remembers from Costco during his years spent on the West coast.
