Lemon poppy seed muffins

Joshua made these lemon poppy seed muffins this past week, and they were so yummy!! In the past, our attempts at lemon poppy seed muffins weren't anything worth raving about, but I think we've now perfected the recipe!

Lots of lemon zest, no lemon juice, and a farm-fresh free-range egg for extra yellow color -- these muffins were the perfect soft, spongy muffin that Joshua remembers from Costco during his years spent on the West coast.

Tammy, I made these this morning during a "muffin marathon", and they are delicious. Not too sweet, just the right amount of lemon flavor, and a great texture. I'm hoping they freeze well, but we may have to wait to find out - they are almost gone! Thanks for a great recipe! Dianne

Lemon poppy seed muffins the same way ever again...I one time requested lemon poppy seed recipes in Taste of Home magazine and received them by the hundreds and maybe thousands! I have a file drawer of them and have still not tried them all!
