A quick omelet dinner

A tossed-up omelet mixture ;)

I am (hopefully!) pulling out of a few-day cooking slump when nothing sounded good to me and the kitchen was usually a mess so I didn't feel like cooking, anyway! :P We also just finally bought some yeast so we can make pizza and homemade bread again! Pizza is such a life-saver when it comes to dinner and lunches, since Joshua takes leftover slices to work with him. :)

We made veggie omelets which we all love -- and it's a perfect meal when I'm feeling uninspired and nothing was planned. :| Yes, I have those days, too.

These look wonderful! I love omelets, but I've never used spinach like this, in one! This omelet needs to go on next month's menu!

i love your site. my name is Isabel but everyone calls me Isa. i have been married to my wonderful husband for 22 yrs and we have two great boys, Carlos, 18 and Rafael, 15. reading about your family reminds me of myself when my kids were growing up. i spent so much time in the kitchen and fixing the everyday things it was unbeliveble. i enjoyed it to the max!!!!! i still enjoy cooking and taking care of my house, grown up children and husband, like you mentioned it is a great experience to be enjoy fully one day at a time. with all the many blessings from our God every single day what else can you ask for?!!!!!!!!!!!!
