Lettuce salad topped with tender seasoned fried chicken breast, sliced almonds, chow mein noodles, and a homemade honey-mustard salad dressing resulting in a tasty Chinese salad

Salad ingredients: 

leaf lettuce, washed and torn
shredded red cabbage (optional)
sliced almonds
chow mein noodles
fried chicken strips (recipe below)
homemade honey mustard dressing (recipe below)

Fried chicken strips ingredients:

2 lb chicken breast
~1 1/2 c flour
1 T seasoned salt
1/4 t black pepper
1 T garlic powder
1 t parsley flakes
1/4-1/3 c oil

Dressing Ingredients:

6 T honey
3 t white vinegar
8 t mayonnaise or salad dressing
2 T Dijon mustard
1/4 t sesame or olive oil

1. Slice chicken breast into thin strips (as thin as possible).

2. In a medium-large container with a tight-fitting lid, combine flour, seasoned salt, pepper, garlic powder, and parsley flakes. Add 1/4 of the chicken meat; close tightly and shake vigorously to coat. Continue adding meat in three more sections, each time replacing the lid and shaking the container (leave meat in when adding more).

3. Heat 1/4-1/3 c oil in a large skillet over medium heat (or just slightly above medium). Add chicken and spread out over bottom of skillet. Allow to fry for several minutes, then stir. Continue stirring and frying until chicken is completely cooked. Drain on paper towels to remove excess grease.

4. Combine dressing ingredients and whisk to remove lumps.

5. To assemble salad, layer plates with lettuce, cabbage, fried chicken, chow mein noodles, almonds, and top with the homemade dressing.

The fried chicken pieces can be still warm/hot, or, if you need to make this up ahead of time, you can refrigerate the chicken and serve a completely cold salad: it's good either way!

This recipe is a 10/10, in my opinion. I love it!!! The fried chicken is a nice treat, so salty and flavorful! The dressing accents the delicious chicken and chow mein noodle flavors. If you have leftover dressing, you can use it as a honey-mustard dip for chicken, or as a salad dressing. It's tasty and keeps well in the fridge. This salad is one of my favorites. A friend of mine made this for me when I ate lunch at her house, and I have been making my own ever since. Very yummy!!

oriental chicken salad
We really like this recipe and I've made it two or three times. The last time I used more salt in the flour mixture which I found to be an improvement. I also used Oriental dressing from the store, instead of making the dressing myself. It was delicious!

Oriental Chicken Salad
This is one of the few salad recipes that is hearty enough for my husband to enjoy as a main dish for supper. I especially like to prepare it in the hot summer months. It makes a delicious supper without heating up the oven.

Different but Good!
I made this for supper last night. Daddy loved it!! It was a fun twist, rather than just having an ordinary chef salad. Really quick to make, too. I'll definitely be adding it to my collections of recipes AND the book I'm putting together for mom of "dad's favorites."

10/10 This salad is a great main dish!
I have only eaten this once, but I am hooked. I am usually not big on sweeter main dishes, so I kind of dreaded eating this salad with such a sweet dressing. I was pleasantly surprised though, when I found myself not only eating it once, but reaching for seconds!
