Chunks of chicken baked on a bed of vermicelli, seasoned and topped with cheese

8 Servings

16 ounces vermicelli or angel hair pasta (cook following directions)
3 cups cubed cooked chicken
5 cups (20 ounces) shredded sharp cheddar cheese
Italian seasoning (use generously)
Salt
Pepper
1 cup milk or half & half

Making Cheesy Chicken Vermicelli one bright summer morning

1. Grease a 9 x 13 casserole dish.

2. Layer pasta, chicken, seasonings and cheese several times.

3. Just before baking, pour milk/half & half over top.

4. Cover with foil, if space permits. (I sometimes press down to compact the ingredients into the dish.)

5. Bake at 350 degrees for 40 minutes.

I like to prepare this dish and refrigerate overnight or for use later in the day when I know I'm going to be too busy to cook dinner.

This is a fun casserole to make, and I love the taste. We use lots of seasonings and cheese on ours. It's also a great way to use up leftover chicken meat [1]. I have gotten lots of compliments when I've served this meal for guests. Just make some garlic bread [1] and veggies, and you're all set! My rating: 10/10.

My family loves this!
It was so easy and I was able to use chicken leftovers and angel hair pasta leftovers. The ingredients seemed so simple I didn't think it would taste as good as it did or be so flavorful. It is even almost better as a leftover the next day.

10/10 I love cheese and chicken!
This is one of my favorite main dishes because I love cheese, chicken, and pasta. Combine them and you get something that's hard to beat: cheesy chicken vermicelli! I can't think of anything bad to say about this recipe because it is definitely tops!

A solid dish that makes great use of leftovers (7/10)
This is a good recipe, but not one of my personal favorites. On the good side the dish is easy to make, can be prepared ahead of time, tastes good enough, and is an excellent use of left over chicken. It also makes good use of spices and seasonings.

On the down side this Chicken Vermicelli can get dried out if you are not careful. If a lot of noodles are sticking out and away from the rest of the dish when you cover it you will end up with hard noodles. The chicken is also hit and miss. If the chicken itself is not seasoned well it can be kind of bland. This is a good dish and everyone who tries it loves it. But I eat it frequently enough that there are a couple things that stick out, when not done quite right, knock it down a peg or two. This is a good recipe with the ability to be great when all the ingredients play well together.
