After initially blogging about this cheesecake almost a year ago, and promising to not forget about sharing this recipe, I finally have the finished recipe completely typed up! Cheesecake recipes take a long time to write up, by the way. :)
While Joshua's first attempt at this Chocolate Caramel Almond Cheesecake recipe (which he created completely on his own!) was very delicious, it had cracks on top. That isn't such a big deal since it gets smothered in chocolate, caramel, and almonds... but Joshua is picky about his cheesecakes, so he made some adjustments and came up with a cheesecake that he considers perfect. :)
And it is really yummy. I am so blessed to be married to a guy who makes fabulous cheesecakes! What you see in the photo above is what Joshua does for me instead of buying flowers. :)

Maybe he should think about quitting his day job and just selling cheesecakes. ;) However, it would be sad if he no longer find it fun or interesting - then it's not doing something you love!
If my husband never gave me flowers and baked me cheesecakes, I think I would weigh A LOT! Ha ha ha! I would request them too often. ;)
This looks amazing! I loved the Vanilla Bean cheesecake so I will have to try this one, too. Maybe during the holidays while we have company? ;)

This looks so so good. But how in the world do you stay skinny with that around? Do you take your kids on walks in the winter? I was just thinking the other day -wondering if it is okay to take like an 11 month old bundled up on a walk in the winter. I know my 2 & 4 year olds enjoy it and can stay warm. lol anyway just wondered. (-:

Cheesecake, weight gain, etc.
Thanks for all the sweet comments about Joshua's cheesecake. :) We've had many suggestions that Joshua should go into the cheesecake-making business (usually after people have tried a piece of one he's made!) but in order to make money on them, we'd have to charge a lot since the ingredients are expensive and they can be rather time-consuming to make... I do usually get my cream cheese for a very good price, but chocolate (good quality chocolate) and whipping cream and chocolate graham cracker crumbs... :)
Well, I'd like to say that I exercise -- but it's not really consistent enough to be considered exercizing. :P In the summer, I do get out on walks several times a week (and usually walk at least a couple miles) but not in the winter. (Tania, I think it depends on how cold of weather you're talking about... I have bundled up a 1-year-old when it was in the 40's or so... it just depends on how windy and how long you plan to stay out there!) I also like to mow the lawn (push mower), and I think that lugging laundry down to the basement to be washed and then out to the clothesline to be hung (while chasing runaway toddlers) should be considered exercise, right? ;)
But anyway, the best way to enjoy cheesecake and not gain too much weight is to eat small pieces... and limit it to one piece a day or something. We put the cheesecake slices (individually wrapped) in the freezer and so it's not like we're eating the whole cheesecake in one week or something... :)
