This whole "Week of Salads" has been a challenge for me! While we did have a general plan, and several recipes were already photographed, it is largely being done in "real time" -- meaning that we've had lots of salads around here lately. ;)
I do love salads. I used to take the time to make them more frequently, and didn't mind a simple lunch of soup and a huge salad. Joshua, on the other hand, considers most salads to be a very minor part of the meal. One small bowl, and he's had enough. So, I usually don't take the time to make a nice salad... which can take a good 30 minutes when you're chopping up lots of veggies for it! :)
But I must put my excuses aside, especially since a week of salads was Joshua's idea, not mine! Today we were having hot dogs for lunch. Joshua suggested that I make a big salad to go along with them. After all, hot dogs aren't much of a lunch by themselves.
At the suggestion of a salad, I inwardly groaned. Maybe outwardly, too. We only had about 10 different vegetables in the fridge, all of which should be put into this salad. One would think that I'd be grateful for the blessing of healthy, fresh food... instead, I didn't feel like doing the work of making it into a salad! :|
I got busy, though, and we ended up with a delicious salad for lunch. I then got motivated to make some Homemade French Salad Dressing (so delicious!!!!) In fact, I didn't even eat a hot dog. Next to a fresh salad with homemade dressing, a hot dog just didn't sound that great.

So true. My family is French and a true French dressing is a vinaigrette.
I know there is a "French" dressing in America which includes catsup, but it should not be confused with authentic French dressing.

I know (from the comments of another French reader, Aline) that a more authentic French dressing isn't anything like this one... I'm not sure why it's called French dressing, but that's what it's called/named here in the US... so I kept the name. :)
I just need one of you to send me an "Authentic French Salad Dressing" recipe for the website, now!! ;)

My recipe for exactly the same dressing calls it home made Russian Dressing.....

I think a true French dressing is oil, vinegar and spices? It is funny it is also called a Russian dressing as Russians would not use something like this either! Catalina is probably more like a good name for it!
