A colorful lettuce salad tossed with black beans and diced tomatoes, dressed with garlic salt and lemon juice

4 servings

1 small head iceberg lettuce, chopped or shredded
1 handful of freshly torn spinach leaves or torn romaine lettuce
1 can (15 ounces) black beans, rinsed and drained (or use about 1 1/4 cups freshly-cooked black beans)
3 medium tomatoes, washed and diced
1/4 teaspoon garlic salt
1 tablespoon lemon juice

1. Toss tomatoes and black beans with garlic salt and lemon juice. Add to greens and stir to combine.

This is a delicious but simple combination of fresh tomatoes and yummy black beans with salad greens. Hearty enough to serve as a light lunch, this salad is also a great accompaniment to mexican-style meals like enchiladas, beef and bean burritos, or nachos. My rating: 9/10... after all, it's just a simple salad. The garlic salt and lemon juice is healthier than most salad dressings, though, and really tasty, too!! :)

We had this for dinner last night with some sandwiches and my dh liked it alot.He said he never knew salad could taste so good with out a dressing on it(like ranch or something else).I liked it better than all those salads we have all the time dripping in dressings.Thanks for sharing it.
