Cornmeal crescent rolls, ready to be baked

I made Cornmeal Crescent Rolls today. It had been at least a year since I had made these delicious rolls. (I think I have way too many "favorite" recipes!)

The bread is a soft, buttery white bread with some cornmeal inside and sprinkled between the layers. The dough uses milk and plenty of sugar, and although they're more work than plain old dinner rolls, they're such a yummy treat!! :)

My regular blog readers know that I have a good share of kitchen disasters (more than I even post about here!), but today I was thankful for rolls that turned out perfectly. I mixed the dough by hand (rather than using my bread machine to knead the dough) and got it just perfect -- not too stiff, and not too sticky.

When I rolled out the dough, I only needed about a teaspoon of flour on my counter. The dough was pliable and moist, but not sticky. The rolls rose beautifully (in my warm oven, of course) and I didn't burn them or under-cook them. ;) And since I've made them before, I knew to have butter softened or melted ahead of time so that it'd be the perfect temperature (no microwave here ;D).

I wish every recipe could turn out so easily perfect. I think a combination of being in a hurry, making too many strange substitutions, not putting enough care into making the food, and who-knows-what-else is my usual problem... oh, and trying new recipes that don't turn out! Thankfully, with the number of reader-submitted recipes I've made in the past year or so, my failure-rate for new recipes has substantially decreased. Thanks, friends!! :)

Those look really delicious, Tammy! Too bad I'm off refined sugar right now :).
When you wrote that you had problems with recipes due to "making too many strange substitutions," I laughed. That happens to me ALL the time!
