May 20, 2007 -- Fluffy Kefir PancakesThank you all for your patience! :) Part of the reason I was waiting to share my fabulous new pancake recipe was because I had been planning a week of posts and recipes involving kefir! So, this week's featured recipe is Fluffy Kefir Pancakes, a simple but delicious breakfast made with kefir! If you don't have any kefir, it can be purchased (though it is expensive! --and be sure to get "real kefir" and not just "kefir", which could be watered-down yogurt sold at a premium!) or, I supposed you could make a substitution in the recipe (use half plain yogurt, half buttermilk, something like that... though I haven't tried it myself that way). :) In the photo above, the Fluffy Kefir Pancakes are being served with homemade apple topping. They're also good plain, just with butter, or any variety of fruits, syrups, etc. :) These kefir pancakes are amazingly fluffy and don't have the after-taste present in some pancake recipes. They're our new favorite! :) Thank you! Well, I'm not sure if I have any secrets to making pretty pancakes, but I think making them smaller makes it easier to flip them. :) I guess just practice and patience, getting the heat just right, and not flipping too soon. ;) We love whole wheat pancakes! I have a much-loved whole wheat pancake recipe to share this week. It's Joshua's favorite pancake recipe, which is saying a lot since he usually doesn't like 100% whole wheat foods as well. :) My whole wheat flour isn't necessarily the freshest, since my parents grind it for me (at their house), but I'm sure it's fresher than what the stores sell. :) Post new comment |

Those pancakes are so pretty! What is your secret? Mine may be yummy, but they never look really nice. My griddle is usually a mess when I am done. Have you ever tried all whole wheat flour for pancakes? That is what I use. It is very hearty and good. But, I use freshly ground white wheat. I think store-bought whole wheat flour is red wheat, which is heavier. Just babbling... :-)
